Chopped Thai Chickpea Salad

STEP 1

Add peanut butter, garlic, grated ginger and apple cider vinegar to a bowl

STEP 2

Whisk in curry powder, cayenne pepper, turmeric and water until smooth

STEP 3

In a large bowl add red cabbage, red bell pepper, cilantro, chickpeas & jalapeño

STEP 4

Add carrots & green onion and pour over the peanut dressing

STEP 5

Toss the salad well so that everything is nice and coated with the dressing

Garnish with cashews and cilantro and serve!
