Cheddar Buffalo Cauliflower Soup

STEP 1

Add cauliflower to a baking sheet and toss with olive oil, salt & pepper

STEP 2

Add a head of garlic drizzled in olive oil & wrapped in tinfoil, then roast

STEP 3

Sauté diced onion, then add to a blender with the roasted cauliflower and garlic

STEP 4

Add salt, pepper, and broth, and blend until nice and smooth

STEP 5

Heat the soup in a large pot and stir in buffalo sauce and cheddar cheese

Top with extra cheddar, buffalo sauce, and scallions & enjoy!
