Damn Good BLT Pasta Salad

STEP 1

First, soak your cashews and cook your pasta

STEP 2

Cook your bacon and chop it into bite sized pieces

STEP 3

Add soaked cashews, water, lemon juice & jalapeño to a high powered blender

STEP 4

Finish with garlic, onion powder, salt & pepper and blend until creamy

STEP 5

Toss your cooked pasta in a bowl with the jalapeño cashew crema

STEP 6

Fold in corn, red onion, lettuce, bacon, avocado & tomatoes until well combined

Sprinkle with freshly ground pepper, serve & enjoy!
