Blackened Salmon Tacos with Forbidden Rice & Mango Guacamole

STEP 1

First, cook your forbidden rice on the stovetop according to the directions on the package

STEP 2

Rub your salmon filet with homemade blackening seasoning and bake or grill it

STEP 3

Mash an avocado, then add red onion, jalapeño and cilantro

STEP 4

Add lime zest, lime juice and mango and mix it all well to combine

STEP 5

Season the mango guacamole with plenty of salt and pepper

STEP 6

Once your salmon is done cooking, flake it off of the skin with a fork

STEP 7

Assemble your tacos: add the rice, salmon and mango guacamole

Garnish with fresh cilantro and enjoy!
