Delicious Low Carb Zucchini Lasagna

STEP 1

Slice your zucchini, then sprinkle it with salt and bake it to help dry it out

STEP 2

Cook down some garlic, onion and green bell pepper

STEP 3

Add ground turkey, tomato sauce, crushed tomatoes and dried oregano

STEP 4

Stir in parsley, basil and red pepper flakes and let the sauce simmer uncovered to thicken up

STEP 5

Mix together an egg white, ricotta, parmesan, salt & pepper in a large bowl

STEP 6

Mix in 1/2 cup of the slightly cooled meat sauce and set aside

STEP 7

Assemble the lasagna by layering the meat sauce, zucchini slices & ricotta mixture

STEP 8

Sprinkle with parmesan cheese and with the rest of the layers. Then cover and bake

STEP 9

Remove from the oven, uncover and bake again

Slice, garnish with extra parmesan cheese & herbs and enjoy!
