Healthy Carrot Cake Cookies

STEP 1

Shred your carrots, then mix with coconut oil, brown sugar, an egg & vanilla

STEP 2

Add a mixture of white whole wheat flour, baking soda, salt, cinnamon & nutmeg

STEP 3

Fold in rolled oats, shredded coconut, chopped pecans & raisins

STEP 4

Use a cookie scoop to drop batter onto a tray, flatten slightly & bake

STEP 5

While the cookies are baking, mix powdered sugar, cinnamon & almond milk

STEP 6

Drizzle glaze onto each cooled cookie
