Lightened Up Cheddar Cauliflower Broccoli Soup

STEP 1

Saute garlic, onion and carrots with butter until veggies are tender

STEP 2

Stir in flour to coat the veggies, then add veggie broth

STEP 3

Add whole milk or half & half, chopped up cauliflower and chopped up broccoli

STEP 4

Stir in salt, cayenne pepper, garlic powder & pepper and let the soup simmer 

STEP 5

Stir in cheddar cheese, reduce the heat, then blend half of the soup until smooth

STEP 6

Stir the blended soup back into the pot, then taste & adjust seasonings as-needed

Serve with a sprinkle of pepper & extra cheddar cheese!
