Southwest Chicken Corn Chowder

STEP 1

Cook chicken with olive oil, salt & pepper in a large pot, then set aside

STEP 2

In the same pot cook onion, poblano pepper, garlic, red bell pepper, potatoes & corn

STEP 3

Add cumin, coriander, turmeric, chili powder, garlic powder & oregano

STEP 4

Add yogurt, milk, broth, salt & pepper and let the soup simmer for 10-15 minutes

STEP 5

Blend half of the soup in a blender, then add it back to the pot with the rest of the soup

STEP 6

Add the chicken back to the pot with black beans and a squeeze of lime juice

Garnish your bowl with cilantro, avocado & any other toppings you'd like and enjoy!
