Lightened Up Healthy Sweet Potato Casserole

STEP 1

Use a fork to poke holes in your sweet potatoes, then roast until very fork tender

STEP 2

Mix together oats, flour, brown sugar & pecans

STEP 3

Add melted butter and mix until a nice crumb forms

STEP 4

Add sweet potatoes to a bowl with maple syrup, almond milk, an egg & vanilla

STEP 5

Add cinnamon, salt, nutmeg & ginger and beat together until smooth

STEP 6

Add the filling to a prepared baking pan, sprinkle with the streusel topping & bake
