White Chicken Chili Pie with Pumpkin Cornbread Crust

STEP 1

Blend together 1/2 cup of drained white beans with broth or water

STEP 2

Saute onion, green chiles and garlic until onions are tender

STEP 3

Cook the ground chicken, then add cumin, chili powder, coriander & oregano

STEP 4

Add salt & pepper, then reduce the heat to low

STEP 5

Stir in corn, cilantro, whole white beans & pureed beans and let simmer

STEP 6

Whisk together an egg, olive oil, honey, almond milk & pumpkin puree

STEP 7

Stir in flour, cornmeal, baking powder & salt until well combined

STEP 8

Pour & evenly spread the cornbread crust over the chili mixture & bake

Serve with hot sauce, sour cream & guacamole and enjoy!
