Jalapeño Coconut Curry Chicken Meatball Bowls

STEP 1

Mix together ground chicken with egg, bread crunbs, garlic, jalapeño, herbs & spices

STEP 2

Roll the mixture into 14-16 even meatballs, add to a baking sheet, and bake

STEP 3

Cook garlic, ginger, green onion, carrots & green beans in coconut oil

STEP 4

Stir in coconut milk, water, and rice, cover the pan, and let everything simmer

STEP 5

After the veggies and rice cook, stir in red bell pepper

STEP 6

Add coconut milk, tahini, garlic, ginger, and maple syrup to a bowl

STEP 7

Whisk together with curry powder, turmeric, cayenne, salt & pepper

STEP 8

To serve: add the veggies, rice, and meatballs to a bowl

Top with the curry sauce, lime juice, and herbs & devour!
