Morning Glory Zucchini Carrot Muffins

STEP 1
Add shredded zucchini and carrot, applesauce, maple syrup and eggs to a bowl
STEP 2
Add in melted & cooled coconut oil and vanilla and mix well to combine
STEP 3
In a separate bowl add oat flour, all purpose flour (gluten free if desired) and baking soda
STEP 4
Add the dry ingredients to the wet and mix until just combined
STEP 5
Fold in raisins and chopped walnuts or pecans
STEP 6
Divide batter into a prepared muffin tin, top with oats & chopped nuts and bake
