One Pot Butternut Squash Yellow Curry

STEP 1

Cook down onion, carrot, cauliflower, and butternut squash in coconut oil

STEP 2

Add fresh ginger, garlic, curry powder, turmeric & cayenne pepper

STEP 3

Stir in coconut milk, broth, peanut butter, soy sauce, salt & pepper, and let simmer

STEP 4

Fold in chickpeas and let the curry simmer. Then stir in fresh spinach

Serve with rice, garnish with cilantro & chopped peanuts, and enjoy!
