Chipotle Gouda Scolloped Sweet Potatoes

STEP 1

Place sliced sweet potatoes in tight slanted rows in your greased pan

STEP 2

Melt butter in a pot, then alternate flour & milk to make a roux

STEP 3

Continue whisking in flour, then let the mixture simmer and thicken

STEP 4

Mix in smoked gouda, chipotles in adobo, garlic, salt & pepper until smooth

STEP 5

Pour the cheese sauce all over the potatoes, cover and bake

STEP 6

Add more smoked gouda, then broil uncovered until nice and golden
