Thai-Inspired Peanut Coconut Cauliflower Chickpea Curry

STEP 1

Cook garlic, ginger, carrot, cauliflower, and green onion in coconut oil

STEP 2

Stir in coconut milk, water, curry paste, peanut butter, soy sauce, and spices, then fold in bell pepper & chickpeas

STEP 3

Simmer the curry, then stir in frozen peas before serving

Serve with rice, garnish with cilantro, green onion & chopped peanuts, and enjoy!
