Blueberry Pie Bars with Oatmeal Crumble (vegan & gluten free!)

STEP 1

Mix together oat flour, oats, brown or coconut sugar, baking soda, salt & cinnamon

STEP 2

Add melted butter or vegan butter, vanilla & almond extracts & mix to form a dough

STEP 3

Press some of the dough evenly into the bottom of your prepared pan

STEP 4

Cook down blueberries, almond extract, arrowroot starch & maple syrup

STEP 5

Add a pinch of salt and press to break down the blueberries just a bit

STEP 6

Pour the filling over the crust, top with the remaining crumble and bake

Let bars cool at room temp, then chill in the fridge & enjoy!
