Thick & Creamy Vegan Corn Chowder

STEP 1

Cook down some onion, poblano pepper, garlic, corn and potatoes

STEP 2

Stir in coconut milk, vegetable broth, salt & pepper and let the mixture simmer

STEP 3

Add half of the soup to a blender and blend until smooth and creamy

STEP 4

Pour the blended soup back into the pot, stir, taste & adjust seasonings as needed

Serve with scallions & a drizzle of coconut milk and enjoy!
