Outrageously Fluffy Vegan Pancakes

The Lineup

Everything you'll need to make these easy, fluffy vegan pancakes

STEP 1

Mix together flaxseed meal, apple cider vinegar, melted coconut oil, vanilla & almond extract

STEP 2

Slowly pour in the almond milk and mix until well combined

STEP 3

Add in your flour, baking powder and salt

STEP 4

Mix just until your batter forms - it doesn't have to be perfectly smooth!

STEP 5

Lightly coat a griddle with olive or coconut oil and place it over medium heat

STEP 6

Add 1/3 cup of batter to the griddle for each pancake

STEP 7

Add your favorite mix-ins like blueberries or chocolate chips

STEP 8

Cook for 3-4 minutes until edges set, flip & cook until golden brown

Add your fav toppings like banana, peanut butter & maple syrup
