Vegan Curry Chickpea Salad Collard Wraps

STEP 1

Mash chickpeas, then add celery, shredded carrot, tart cherries, cilantro & red onion

STEP 2

Add tahini, lemon juice, maple syrup, curry powder, turmeric & fresh ginger to a bowl

STEP 3

Add garlic powder, cayenne, salt, pepper & water and mix until creamy

STEP 4

Pour curry tahini dressing all over the chickpea salad & mix to combine well

STEP 5

Prep your collard leaves by slicing off the stem and shaving down the rest of the stem

STEP 6

Add the chickpea salad and top with red cabbage, cashews and fresh cilantro

STEP 7

Carefully wrap your collard leaf, tucking in the ends as you go, then slice in half
