Kale, Edamame & Quinoa Salad

STEP 1

Bring the quinoa to a boil with water, then cover and cook on low for 15 minutes

STEP 2

Add olive oil, lemon juice, dijon mustard, garlic, salt & pepper to a blender

STEP 3

Add honey and fresh basil and blend until nice and smooth

STEP 4

Massage the dressing into a bowl of kale so that it's evenly coated

STEP 5

Add the quinoa, red onion and edamame

STEP 6

Add the rest of the dressing, tomatoes, mango, avocado & toasted, sliced almonds

STEP 7

Toss the salad well and garnish with more sliced almonds
