  • For the pancakes
  • 1 box Simple Mills Gluten Free Pancake & Waffle Mix
  • 2 eggs
  • 2 tablespoons almond milk (or water)
  • 4 teaspoons melted coconut oil or melted ghee
  • For the toppings:
  • 4 tablespoons dark chocolate chips, dairy free if desired
  • ¼ cup shredded coconut (not the large flakes)
  • 1 tablespoon pecans
  • 1 tablespoon color candied pieces (or sub cranberries)
  • ½ banana, sliced into ½ inch round coins and then in half

  1. In a large bowl mix together 1 cup Simple Mills mix, eggs, almond milk, and coconut oil until well combined.
  2. Heat a lightly oiled griddle or <g class="gr_ gr_174 gr-alert gr_gramm gr_inline_cards gr_run_anim Grammar multiReplace" id="174" data-gr-id="174">skillet on</g> medium heat. Pour 2 tablespoons of batter onto griddle for the snowman body pancake, and pour 1 tablespoon of batter onto griddle for the snowman head.
  3. Cook until pancake begins to bubble and the other side turns golden brown. Flip pancake and cook until pancake is golden brown on both sides.
  4. Repeat the above steps to make 4 total snowmen (a head + a body).
  5. Once pancakes are cooled, top them with shredded coconut, add chocolate chips to make a face, M&M’s for the buttons, banana slices for the scarf, and ½ pecan for the nose. Serve with maple syrup if you’d like or nut butter. Makes 4 snowmen (2 pancakes each)
