Dad’s Dilly Greek Yogurt Cucumber Salad
Dad's fresh Dilly cucumber salad made with greek yogurt instead of mayo. A refreshing, sweet and tangy summer salad!

large cucumbers, peeled and thinly sliced
small red onion, thinly sliced
2% plain greek yogurt
apple cider vinegar
honey or sugar, to taste
Freshly ground salt and pepper, to taste
Add greek yogurt, dill, apple cider vinegar and honey/sugar to a large bowl. Mix together to combine. Next add in cucumbers and red onion to the bowl and fold everything together until well combined and the dressing has coated the cucumbers. Season with salt and pepper to taste. Cover and refrigerate for at least an hour before serving. Best if served within 24 hours of making.
