Feel free to add in a scoop of protein powder if you’d like these to have an extra boost of protein. Please note that protein powder will change the consistency of the balls so you may need to add in extra peanut butter or a little extra honey to help them stick together/stay moist enough.
To make vegan: use maple syrup or date syrup instead of honey and choose vegan chocolate candies or sub with vegan chocolate chips.
Feel free to use any nut butter you’d like in this recipe. I think they’re best with peanut butter but any other nut butter should work okay as long as it’s all natural with no additives.
How to store & freeze: keep these energy bites in an airtight container for up to 1 week, or in the freezer for up to 2 months. If you’re eating them straight from the freezer I’d recommend letting them soften up a bit in the fridge or at room temp before doing so.
