Spinach & Goat Cheese Quiche with Sweet Potato Crust

STEP 1

Line a pie pan with sweet potato slices, spray with cooking spray and bake

STEP 2

Cook onion, diced tomato & spinach in a skillet with olive oil

STEP 3

Whisk together eggs, almond milk, salt & pepper

STEP 4

Add the veggies to the baked sweet potato crust and pour the egg mixture on top

STEP 5

Sprinkle the quiche with goat cheese, salt & pepper and bake

Let the quiche cool, slice & enjoy for brunch!
