Arroz con Gandules (rice with pigeon peas)

STEP 1

Cook down onion, green pepper, cilantro & garlic until softened

STEP 2

Add tomato sauce & sazon and simmer until sauce comes together

STEP 3

Add pigeon peas, water & rice, bring to a boil, then reduce to a simmer until rice is tender

Top with avocado & cilantro, and stir in sliced olives if you'd like!
