Avocado Blueberry Quinoa Salad

STEP 1

First, cook your quinoa with water in a large pot for 15 minutes

STEP 2

Add cilantro, jalapeño, lime juice, olive oil, salt & pepper to a blender and blend well 

STEP 3

Fluff the cooked quinoa, let it steam, then and add it to a large bowl

STEP 4

Add avocado, blueberries, corn and diced red onion to the bowl

STEP 5

Add feta, cilantro and pistachios and toss to combine

STEP 6

Pour cilantro lime dressing over the salad and toss well to evenly coat the salad

Top with extra feta & cilantro and serve!
