Ingredients

  • 1 cup mashed banana (from about 3 medium ripe bananas)
  • 2 large eggs, at room temperature
  • 1 ½ cups (360g) unsweetened vanilla almond milk (or sub any dairy free milk)
  • Optional: 2 tablespoons pure maple syrup
  • 2 tablespoons melted and cooled coconut oil (or sub melted butter or melted ghee)
  • 1 teaspoon vanilla extract
  • 2 ½ cups (238g) old fashioned rolled oats, gluten free if desired
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon kosher salt
  • 1 cup diced fresh strawberries
  • ¼ cup (45g) mini chocolate chips (dairy free if desired), plus 2 tablespoons for sprinkling on top

Instructions

  • Preheat oven to 350 degrees F. Spray a 9x9 pan with nonstick cooking spray.
  • In a large bowl mix together mashed banana, eggs, almond milk, pure maple syrup (if using), coconut oil, and vanilla until mostly smooth.
  • Next add in rolled oats, baking powder, cinnamon and salt until well combined. Finally gently fold in diced strawberries and chocolate chips.
  • Pour mixture into prepared pan and smooth top. Evenly sprinkle 2 tablespoons mini chocolate chips on top. Bake for 25-35 minutes until edges start to become slightly golden brown. Cool for 10 minutes, then cut into 6 slices. Serve warm with a tablespoon of almond butter or peanut butter. This is also wonderful served warm in a bowl with a little milk poured in or vanilla yogurt on top.

Notes

To meal prep: Wait until oatmeal cools down, then cut into 9 squares and put into meal prep containers with a tablespoon of almond butter on top.
To freeze & reheat: Once the baked oatmeal has completely cooled, cut it into 6 squares and wrap each square in plastic wrap and tinfoil. When you’re ready to eat it, place the unwrapped frozen square of baked oatmeal on a microwave safe dish and microwave it at 30 second intervals for 1-2 minutes. If you’d like to freeze the entire baked oatmeal for later, simply reheat it in the oven for 20-25 minutes at 350 degrees F while it’s covered with tinfoil.
