1small seedless watermelon, skin removed and chopped into 1-inch cubes (4 cups total)
1bottle rosé wine
Optional: 1-2 tbsp. agave nectar or honey
Instructions
Place watermelon cubes on a parchment-lined baking sheet, and freeze until solid (about 4-6 hours or overnight).
Pour a bottle of rosé into two ice cube trays, reserving 1/2 cup rosé for blending later. Freeze the ice cube trays while you're freezing the watermelon. The wine will mostly freeze but might remain a bit slushy from the alcohol.
Remove the watermelon cubes from the freezer and let them thaw on the counter for about 10 minutes so that they're not completely rock hard.
Add the watermelon cubes with the rosé cubes and the remaining 1/2 cup of rosé to a high-powered blender. Add agave nectar or honey, if using.
Blend until the mixture becomes a slushy consistency, using your blender stick or a wooden spoon to stir things around if it gets stuck.
Serve immediately in wine or cocktail glasses or bowls and eat with spoons.
