Ingredients

  • 1 cup 2% or whole milk plain greek yogurt
  • 2 teaspoons extra virgin olive oil, plus more for drizzling
  • 1 tablespoon lemon juice
  • 1 clove garlic, grated
  • 1/2 cup finely grated/shredded cucumber (from 1 small cucumber)
  • 1 tablespoon chopped fresh dill
  • 1/4 teaspoon kosher salt
  • Freshly ground black pepper, to taste

Instructions

  • In a medium bowl, mix together the Greek yogurt, olive oil fresh lemon juice, garlic, cucumber and dill until well combined. Add salt and pepper, to taste. Serve with pita chips, in a gyro, on a sandwich, in greek salads or with carrot sticks. Makes 6 servings.

Notes

I recommend using a thick plain whole milk or 2% greek yogurt so that the cucumber doesn't water down the yogurt too much.
Use fresh garlic in this recipe. You can either grate or finely mince the garlic.
