Ingredients
2sliceswhole grain or gluten free bread
1/4cuplow fat ricotta
1/2fresh lemon, juiced
1/2tablespoonhoney
4figs, sliced
2tablespoonspistachio pieces
1teaspoonlemon zest
Instructions
Toast bread in toaster.
While bread is toasting, whip together ricotta, lemon juice and honey until smooth and creamy. Spread ricotta moisture evenly over each piece of toast, then top with sliced figs.
Sprinkle each piece with pistachio pieces and lemon zest. Serves 2.
