Hi guys! Happy weekend. Grab your cup of coffee, it’s going to be a long one!

This past week: Oh my goodness it has been a WEEK. I just got back from a trip to Maine to learn more about wild blueberries. Unfortunately during my time there, I somehow came into contact with a terrible case of food poisoning from food at a restaurant. On Tuesday, I was stuck in my hotel room all day and night feeling like death. This was the first time I’ve ever had food poisoning, but can 100% say I never want to have it again. Such a bummer when that happens, especially while traveling!

The good news is I’m finally feeling better and ready to actually enjoy food again aka ready to bake my heart out, swing my cart around Trader Joe’s like a maniac, and crush kombucha like it’s my job. You know how I do.

We’re skipping weekend favorites because guess what today is? My six year blog anniversary! Truly I cannot believe it’s been six years since I wrote this post and then two days later hit publish. I had no idea what I was doing, all I had was a genuine feeling of excitement to be able to finally share recipes with anyone who who read them.

I knew I was doing what I loved from that moment on. Discovering baking, talking with you about my dreams, sharing my goals, going through a health journey and inspiring you has been all apart of this six years. And you’ve inspired me too. We’re back in action with full carts (and empty cupboards) at Trader Joe’s! While I did pick up my usual organic produce, baking needs, and Tony’s favorite sandwich meats, I had to balance it out with some fun new snacks and treats. As you all know I love to whip up homemade goods on the regular…but everyone needs some good grab-and-go’s, am I right?

Let me tell you about my day yesterday because it was a doozy.

  1. My car got towed
  2. I got a ticket because I didn’t have my current plates registered (so I was a few days late)
  3. I got another ticket because I didn’t have something called a ‘city sticker’
  4. I couldn’t pick up my car because they wouldn’t let me register my vehicle
  5. I got a bill from the IRS from 2015

Sweet potato zoodle bowls with saucy turmeric coconut milk sauce and a hint of peanut flavor. The sauce is SO amazing you’ll want to lick the bowl clean!

Well it’s officially the end of zucchini week. Abra and I really had a delicious week here baking with green things and spiralizing our hearts out and we hope you loved it too. I also had a wedding freakout about how expensive things are getting.

Everyone says it’s going to be perfect come the day of, but whoa. What the hell? This shit is crazy. Tony and I have this amazing, beautiful life together and can have it without a giant party. In fact this giant party of a wedding is just causing me a ridiculous amount of stress. I 100% understand why people hire wedding planners now. I’m going out of my damn mind.

I just got back from New York and am feeling AMAZING after a beautiful time with my Under Armour Women fam. Truth be told it was only my second time in New York City. You’d think that by how much I love Chicago and how big of a city it is that I would have been to New York more. For some reason though, work just never seems to bring me out to the East Coast.

But this city wraps you in its arms and sweeps you up into the busyness. The people are the veins of the city, giving it life and energy everywhere you turn. The rush of people, the attitude, and the hustle is different than what I’m used to, yet somewhat addicting in a way I wouldn’t have expected.

Happy Wellness Wednesday, everyone! I hope you’ve had a fabulous week so far. I landed in NYC late last night after a couple days of recipe-testing at AK HQ, and I couldn’t be more excited to share all of the new recipes with you guys (Abra and I had trouble just fitting them all into the upcoming weeks!).

If you know me at all, you know I LOVE Trader Joe’s. Not only do I find it less expensive than most grocery stores here in Chicago, but I love their fun, new products and bopping around in those cute little red carts. Of course, it’s essential to avoid the Trader Joe traffic so I find that early morning shopping is best.

I got home from Minnesota late Wednesday night. We had no food in the fridge so the next morning I woke up to Trader Joe’s and did a huge grocery store run. Grocery stores just so happen to be my favorite way to start my morning. Seems weird, but then again that’s exactly what I am.

When I first moved to Chicago, I’d walk a few miles to the grocery store and spend my sweet time browsing the aisles and exploring interesting food products. It was always one of my favorite slow ways to start the day after my workout. I should really do more of it.

Anyway this week I got the most amazing pumpernickel bread from TJ’s and made turkey sandwiches with basil, spinach, avocado, nutritional yeast (a new TJ’s item), turkey and dijon. I had been craving a really good turkey sandwich and this was certainly satisfying.

Hi guys!

First of all, I just want to say how crazy happy I am that June is over. I know it seems silly, but last month was a little insane with travel, work and wedding planning. And now July is (almost) here and I couldn’t be happier, especially because my mama is coming to visit me. I’ll be picking her up from the airport in just a few hours. I’m gonna roll up with Lil Wayne blaring; it’s her favorite. JOKES.

Can you believe that I haven’t seen her since last September? In fact she hasn’t even seen my wedding ring in real life or my new condo! Like I’ve said, life’s been a little insane this year.
