I’m SO happy that I’m taking this time to do a little getaway, get a little crazy, eat THE BEST food and enjoy hiking too. If you aren’t following me on Instagram already, do it now because I’m going to be sharing my trip with you allllll weekend long.

I’m sitting here early morning drinking my morning coffee and relaxing to the music of Oh Wonder. I love how the sun is just starting to peek out over the trees and that yes, it’s feeling like Fall might just be in the air. In fact, the crisp air took my breath away when I opened our patio door this morning; I was a little shocked by how chilly it got overnight. I suppose it’s finally time to turn off the AC, open all the windows and soak up the last few weeks of summer.

Hi guys! We’re back with the last episode of the wellness series in partnership with Under Armour Women.
I spent last weekend at a retreat in Santa Barbara working on personal and business goals at the Big Soul Retreat that Under Armour so graciously sponsored me for. I had been wanting to go on a soul searching type of retreat for quite sometime and so when this one popped up on my radar, I knew it was time to do it. And it’s perfect because today we are talking about what’s next for Ambitious Kitchen.
First off, the retreat offered me exactly what I needed: a chance to explore my fears and wants, yoga daily, plant based meals, and a destination away from the chaos that is often my daily life.
Because the truth is, over the past year and a half or so, I’ve been overwhelmed with the level of stress in my life. It’s not something I talk about often, but it frequents my days and weeks like you wouldn’t believe. Where does the stress come, you might ask? Buying a house, getting married and running two businesses and the pressure I put on myself to always being DOING.
However the truth is, I should be less hard on myself. I really do have my dream job. I have a life that I’m really proud of. And more than anything I’m so incredibly grateful to have a community of people who make my recipes on a regular basis. I wish I could give you all a big hug.
Sometimes when you’re always on the go, you forget to say thank you to yourself for all the hard work you’ve put in along the way. You forget to tell yourself how proud you are and acknowledge what it took to get where you are. We’ve all got our own unique journeys and I’m SO incredibly blessed to be on mine.
While I really don’t know what’s next for Ambitious Kitchen, I’d like to think that a cookbook is on the radar and potentially going back to school for nutrition. We’ll see. All I know is that I can’t thank you enough for being here.

Hiiiii friends. Writing this to you from a soft bed in a gorgeous home tucked just outside the Santa Barbara mountains; I’m here for a retreat for female entrepreneurs and couldn’t be more excited! My stomach is content after inhaling an absolutely to die for meal of vegan enchiladas paired with brown rice and a southwest tahini kale salad.

This past week: Oh my goodness it has been a WEEK. I just got back from a trip to Maine to learn more about wild blueberries. Unfortunately during my time there, I somehow came into contact with a terrible case of food poisoning from food at a restaurant. On Tuesday, I was stuck in my hotel room all day and night feeling like death. This was the first time I’ve ever had food poisoning, but can 100% say I never want to have it again. Such a bummer when that happens, especially while traveling!
The good news is I’m finally feeling better and ready to actually enjoy food again aka ready to bake my heart out, swing my cart around Trader Joe’s like a maniac, and crush kombucha like it’s my job. You know how I do.
We’re skipping weekend favorites because guess what today is? My six year blog anniversary! Truly I cannot believe it’s been six years since I wrote this post and then two days later hit publish. I had no idea what I was doing, all I had was a genuine feeling of excitement to be able to finally share recipes with anyone who who read them.
I knew I was doing what I loved from that moment on. Discovering baking, talking with you about my dreams, sharing my goals, going through a health journey and inspiring you has been all apart of this six years. And you’ve inspired me too. You’ve helped me grow and become the woman I am today. SO THANK YOU FOR BEING HERE! I LOVE YOU GUYS! xoxo
We’re back in action with full carts (and empty cupboards) at Trader Joe’s! While I did pick up my usual organic produce, baking needs, and Tony’s favorite sandwich meats, I had to balance it out with some fun new snacks and treats. As you all know I love to whip up homemade goods on the regular…but everyone needs some good grab-and-go’s, am I right?
