My favorite cookies! I made gluten free and flax egg with success.

I made these cookies using Bob’s Red Mill 1-1 GF flour and maybe it just doesn’t sub well in this recipe. I followed the recipe to a T otherwise. When they came out of the oven, they were completely spread across the baking sheet! I salvaged what I could and tried making them cookie-shaped, but something is not quite right. They also took 15+ minutes to cook & felt like I was just cooking butter by the way they greased up and all over on the pan.

I can’t eat gluten but will have to try with regular flour next time. I love all your recipes – and so does everyone I share them with. Made the pumpkin tahini cake from your cookbook the other day and my friend joked that she wanted it to be her wedding cake!

These cookies are fabulous! I’ve made them twice and they get rave reviews! The dough is a little wetter and sticker than some other cookie doughs, i followed the recipe as instructed and they are fabulous. They taste best when they are cooled and the flavors have some time to develop.

These are insane! The brown butter 😍

I successfully made them fit my dietary restrictions.
Made them gluten free using Bob’s 1:1. Same amount of grams. I removed the egg and replaced it with yogurt.

The time I used eggs the batter felt a lot thinner. And I had to to refrigerate for longer so that they didn’t completely spread to nothing in the oven.

The yogurt made the batter thicker. I actually had to press the balls down because they didn’t want to spread in the oven.

Flavor wise egg versus no egg tasted the same.

I’m glad those experiments worked out well!

These were soo delicious! Insane. I have never had a cookie like these either. My husband and son aren’t huge sweet tooth people but they loved these. I will for sure be baking these again in the near future!

11/10 these cookies are absolutely AMAZING! I’ve made them three times now and people have said they are the “best cookies they’ve ever had.” They’re everything you want in an indulgent, cozy, tasty cookie.

Subs: I used fresh and finely ground decaf espresso beans rather than espresso powder. Just remove any big chunks before mixing in.

I tried them with only 2/3 sugar and more oatmeal, but they still turned out way too sweet. I would recommend only half or less sugar.

    • replied:

Sorry to hear that! They are meant to be a more indulgent cookie. Let me know if you try it with even less sugar.

I have made this twice now and it’s become a fave! I am usually a chocolate chip or any chocolate based cookie person, but this recipe has converted me! I made this for a few coworkers and they LOVED it!! My coworker has requested these cookies for her birthday!! The directions were pretty easy to follow as well! Thank you so much!

This is such a fun and delicious recipe! My only question is how you get your cookies so flat? Mine always come out kind of chonky when I put them on the pan as balls.

    • replied:

Glad you love these! Do they flatten up a bit like the photos after baking? What brand of oats do you use?

Monique. I make dozens on dozens of cookies each year. This might be the best f****** cookie I’ve ever made.

These were such a hit in my cookie gifts this year. I don’t usually like to try new to me recipes for my Christmas boxes, but I’m so glad I did. They taste just like what they look like -chewy, not too sweet with great coffee flavor. I followed everything down to a T (including the brand of Oats even though I already had a container of Quakers and actually already had the same brand of espresso powder). Thanks for a great recipe!

I made this cookie today and let me tell you! It was so good. The espresso really comes through and lives up to its name. I did add the extra oats for a thicker texture and loved the adjustment.

    • replied:

      Love it! Glad you enjoyed!

  • says:

For the espresso, do you brew it or just use the grounds as is?

  • says:

Can these cookies be baked the next day?

    • replied:

Sure! Just take the cookie dough out of the fridge while you preheat your oven.

Loved the idea followed all the instructions and the cookies was way to thick it didn’t become thin like the photos ended up cakey

    • replied:

Hi! Did you weigh your ingredients? And what brand of oats did you use?
