Healthy Baked Oatmeal with banana, strawberries and chocolate chips — great for serving during the holidays or to meal prep for breakfast throughout the week. Simply reheat and enjoy! Recipe made in partnership with Almond Breeze almondmilk.

Happy holidays friends! Currently I’m on my honeymoon in one of my favorite places on earth: Australia! We left on the 16th and arrive on the morning of the 18th in Sydney. LONGEST FLIGHT EVER but worth it.

Our travel plans consist of Sydney, Brisbane, Cairns, Daintree rainforest, wineries, Byron Bay and a few other stops along the way — we certainly have an amazing two week itinerary here before we leave for Hawaii for another week. We’re thrilled to be able to spend this time together as newlyweds and I can’t wait to share all of the details with you. And of course, all of our wedding photos!

Stuffed acorn squash with cranberry, pecans and quinoa then drizzled with a simple goat cheese crema. Perfect for vegetarians at Thanksgiving, or anytime you’re looking for a healthy plant based meal or side.

Here we are again! Thanksgiving is getting close and I’m more than ready to bust out all the fabulous recipes I’ve been testing in my kitchen over the last few weeks. Safe to say Abra and I have been eating very, very well.

To me, Thanksgiving can involve your Grandma’s classic recipes but it can also be about experimenting with new recipes and creating your own traditions. Since coming into Tony’s family, I’ve introduced my both my cranberry sauce and sweet potato casserole to the table and now each year we’re sure not to miss it.

I’m even more excited about the recipes I’m going to post this week and next because they are creative, beautiful and healthy. YASSS.

Incredibly flavorful yellow curry chicken and rice made in one pot with plenty of veggies and delicious flavors from coconut milk, ginger, garlic and turmeric. Great for meal prep!

Hello, hello! I hope you’re reading this with a smile on your face, a cup of coffee or tea in your cup and of course that you had a relaxing, rejuvenating weekend. Did you do anything fun?

We spent Friday night dining out at my favorite sushi place in the world and sipping wine. I was craving the roll called the black mafia — if you’re ever craving sushi in Chicago, this place is where it’s at!

Saturday went by quick too — we met our wedding photographers and scoped out beautiful spots around the city to take wedding photos (we’re less than two weeks away). And on Sunday, I relaxed on the couch, made a puerto rican chicken stew with tostones and caught up on several episodes of Stranger Things.

(The stew was fantastic by the way, I’ll post the recipe soon.)

Pumpkin chicken chili with black beans and quinoa! A protein packed delicious dinner that can be made in your slow cooker.

Pumpkin week recipe #2 is here and it’s a savory one! I’m writing this while we’re driving back into the city after a long weekend of wedding planning. It’s raining out, No Doubt is blasting and one of our windshield wipers isn’t working correctly.

Secretly I’m hoping it will continue raining for next few days so I can cozy up under a blanket, take a bath every night while chilling out to my Spotify playlists, followed by a big bowl of chili with sweet cornbread on the side.

I swear to you, my belly needs a break from tequila for a while.

Just keepin’ it real.

Enchilada turkey meatloaf stuffed with sharp cheddar cheese and jalapenos to make this a deliciously spicy and FUN dinner idea!

As I was photographing this meatloaf, I thought to myself how difficult it was to actually make meatloaf look delicious. Then again I thought, maybe a saucy photos are the way to do it. Saucy photos are popular on Pinterest so I’ve concluded that people must love them.

Or at least that’s what I told myself when I photographed this recipe anyway. Heh.

We’re back with another Round Up Sunday! I hope you guys have had an amazing weekend, and that this roundup is a day-brightener for any “Sunday Scaries.” I’ve found that the best way to cure the scaries are to get a workout in – even if it’s just a nice walk outside – practice some self-care (hello relaxing bath + calming playlist), and of course, make delicious food like these healthy slow cooker recipes.
