How was your weekend? We finally set up our living room with our new rug, plus I just ordered a custom designed ottoman, which I’m really quite excited about. We picked a dark blue velvet color and can’t wait to see it when it arrives in a few weeks. Other new things? A black custom french-looking desk and a small side table that’s going to be painted a bronze gold. Obsessed is an understatement.

Hmmm what else? Chicago’s been insane lately. We’ve had the Chicago marathon, the Cubs in the playoffs and the Bears actually won TWO games. Thus, I’ve been eating a little too much pizza and bar food lately. What I’m really craving now is a seriously good veggie burger with a huge side salad.

So The Leftovers is back on HBO and I’m still utterly confused as to what’s happening. I actually have no idea why I’m still tuning in. Quite frankly, it may be strictly for a glimpse of Justin Theroux. Just sayin’.

There aren’t many other shows I’ve been keeping up with because I can’t seem to get into any. I’ve already watched Bloodline, Breaking Bad, House of Cards, Bates Motel and The Vampire Diaries (don’t judge me on that one). What I’m really waiting for is a return of Game of Thrones or The Americans. Or maybe they’ll just put Dawson’s Creek and Felicity both on Netflix? Everyone knows that throwbacks are truly the best.

Yesterday we moved into our new apartment! Finally, I’ll have own office. And our place is much larger than my previous 700 square foot 1-bedroom.

I’m so eager to get to Home Goods, Pottery Barn, Target plus go antique shopping. The upside of moving is that you get to completely redecorate. If I haven’t mentioned before, my style is very romantic with a bit of sophistication. I love antiques and making them new again with a fresh coat of paint. In fact, I recently had an old headboard painted a beautiful bronze gold from my friends at MegMade here in Chicago. They have a wonderful Etsy shop too, so check it out!

Quinoa pizza crust? Yep, it’s a thing. And I have to give Tony credit because he totally came up with the idea.

Sometimes we have little brainstorm sessions while we walk to get our morning coffee. I told him that I wanted to do something fun and different with quinoa (which he pronounces kin-oh-ah) and asked for some suggestions. He asked, “Can you actually make a quinoa pizza?”

Uh, sure? Wait… yes of course, that’s a fantastic idea! Thanks babe.

Enchiladas are known in my family to be the ultimate comfort food. I’ve grown up all my life eating them a variety of different ways: red sauce, green chile, a tomatillo salsa version, avocado and even sour cream. In my opinion, all enchiladas are worthy of eating.

And shame on me for not giving you this recipe sooner! The first time I made this version, Sarah and I devoured these after a long day of photography and recipes. Our minds were teetering on the verge of delusional and delirious, but our bellies were happier than ever.

If I ever move anywhere else in the United States, it would be to California. Lately I’ve been thinking about the days when I used to live in Hermosa Beach. The weather was indescribably beautiful. The neon pink and orange sunsets were astounding. The wines were bold and native. The hiking trails were gruesome (in a good way).

Every year these memories come up as we approach cooler temperatures. I can already feel it happening and I’m just not ready yet. How about you?

HEALTHY LOW CARB Turkey Zucchini Meat Loaf stuffed with pepper jack and topped with the most delicious sauce EVER!

Zucchini, zucchini, ZUCCHINI. It’s taking over my life. I’m not sure I mind so much, but I can tell you that I’m getting sick of shredding the zucchini. I have a few more to use up but after that I don’t think you’ll see another zucchini recipe from me in quite sometime. My right arm physically hurts from zucchini shredding syndrome. Yes, it’s officially a syndrome (in the AK book anyway).

I realize I’ve been doing various baked goods with zucchini so this time I wanted to bring you something a little savory like this turkey zucchini meatloaf. I decided that adding some zucchini to a turkey meatloaf would not only be a great way to get my veggies in, but also to add moisture (since I use lean turkey).

My favorite way to eat food this summer is in the form of grilling. Also known as the easiest way to make a delicious meal.

Here’s something I learned recently: Did you know that you can place a can of baked beans right on the grill? Tony taught me this trick and I was thoroughly impressed. All you have to do is open the can, remove the label, then place on the grill until bubbly hot. Easy and no pans required!

Now that you’ve got that trick under your belt you have to time to whip up some of these sweet and spicy turkey burgers.

While I enjoy all fruit, I never purchase cherries too often because I always have felt limited as to what I could do with them. Usually the only thing I made was a basic fresh cherry pie or an apple cherry crisp.

But then I realized that I ain’t no basic chick and made this bright salad with all of the good things in life. Hells yes.
