I made and the flavor is great. I omitted the glaze & strawberries. Mine were a bit crumbly. I would prefer a more moist muffin. Can you suggest an ingredient that would enhance to do so?

    • replied:

You could try adding another tablespoon or so of olive oil!

Hi monique, These sound delicious.. just wondering if this recipe could be made into a loaf and if so, how long would i bake it for?

    • replied:

Hi! Yes, that should work well. I would bake for about 40-50 minutes.

As always recipe is amazing. I substitute pistachios for almond flour, and bananas for apple sauce. I love how versatile recipes are. Your website has brought joy back to my kitchen since having to go gluten and dairy free!

Hi, do you know how much the pistachios weighed or how much they measured after you ground them? Someone gifted me pistachio flour and I’d like to make your recipe

If I didn’t want to make it vegan, could I sub a real egg for the flax meal? Can’t wait to try these!

Go to Elote Café for dinner in Sedona! We honeymooned in Sedona and absolutely loved it. I didn’t want to go to Elote because it is connected to a hotel, but everyone kept raving about it and they were right! http://www.elotecafe.com/home

Hit up the local juicery for amazing smoothies, elote cafe for Mexican food, and Cafe paleo brio for tons of healthy options! Oh and please go to chocolatree for some goodies! Enjoy your trip!

The strawberry and pistachio combo in these muffins sounds delish, almost like spumoni without the chocolate! These muffins are gorgeous, love that pretty in pink glaze!
