It’s absolutely delicious, yet easy! You won’t be sorry you tried this recipe.

    • replied:

      So glad you loved it!

  • says:

I had a hard time getting the cornstarch to mix with the other ingredients. I ended up with little cornstarch balls floating on top of the filling after whisking for a long time. I had stirred the eggs and sugar mixture before adding the juice, sour cream, salt and cornstarch, What happened?

I have made this recipe and love the ginger and lemon combo! Would I be able to make squares with this recipe?

    • replied:

So happy to hear that! I haven’t tried, so I’m not sure how I’d adjust the recipe. Let me know if you experiment!

  • says:

Do you think you can sub Limes in place of the the lemons for more of a key limes pie? Love this receipe as is but my husband would like Key Lime pie for his birthday dinner I am making. Do you think the texture would be the same?

    • replied:

I haven’t tried it, but let me know if you do!

This pie was amazing!! I made it for Easter and everyone loved it and requested I make again. And I will! I followed the directions and ended up using biscotti for the crust (because I couldn’t find ginger snaps!) and it was delicious- left everyone guessing what the crust was. Can’t wait to try again with ginger snaps. Thank you for the recipe!!!

Made for Easter…DELISH!!! I love lemon and this pie delivers. Used Biscoff instead of gingersnap cookies and added vanilla bean pasta in the fresh whipped cream. Every one loved it, thanks again Monique!

Sounds amazing!! Glad it was a hit!

So delicious! Made it for Easter and the whole family loved it. I used biscoff cookies for the base and left out the brown sugar and it was a slam dunk. The pie with the whipped cream was a perfect balance of sweet and tart so not overly sweet which I love!

    • replied:

Sounds incredible! Glad it was a hit!

The perfect Easter dessert! I used graham crackers and omitted the brown sugar in the crust and it was delicious! The perfect balance of sweet to tart, will be making again!!

      Perfect! Glad you enjoyed!

Perfection every time I make it (5 and counting…)! The steps are easy to follow and everything comes together beautifully. The flavor is the perfect balance of tart and nutty. Ginger and lemon go together like peanut butter and jelly. I love serving it with a few fresh strawberries on the side when they’re in season.

So glad this is a favorite!

This was delicious! So easy too! I made all the company the day ahead then baked for a dinner party. It will be on repeat

This was delicious! I am gluten and dairy free, so made it as such. I didn’t have time to make homemade gingersnaps, so I used Simple Mills honey Cinnamom Sweet Thins in lieu. I also used Forager Sour Cream and Whole Foods Oat Whip cream. Definitely a keeper – a little tart and tangy and the crust was just perfect.

    • replied:

Perfect! I’m glad those swaps worked out well!

I did a trial run of this lemon pie, and also of your nutter butter banana cream pie. Both were amazing! I will be making these for Easter. I’m wondering if you think it would be okay to make both pies on Friday and serve on Sunday? Or, is two days in the fridge before serving too long?

    • replied:

So glad you loved both! I always love serving a pie to guests as fresh as possible, usually making the day before is best!

  • says:

    They make gluten free gingersnaps!

    • replied:

      Perfect!!

  • says:

I’m looking forward to making this dairy free- Forager makes a great sour cream that’s diary free. You can also find a dairy free whip cream in a can. Not sure the quality as it’s been a while since I purchased Whole Food’s 365.
I also make my own ginger snaps with 1:1 flour by Bob’s Red Mill or King Arthur- both great options.

This pie is delicious and loved by everyone I served it to, from 3 to 96 years old! I think the recipe should say to use a deep dish pie pan. I used a traditional 9 inch pie pan and had too much filling for the pan. Also, some of the crust came into the filling during baking – the pie was speckled with little crust pieces. I covered the pie with whipped cream so no one was the wiser. This recipe is definitely a keeper and I will make again.

    • replied:

I’m glad it was still a hit with everyone! Let me know how it goes with a deep dish pie pan next time — I’ll have to try that, too 🙂

Your banana cream pie is a family favorite, so we had to give this one a try for our Thanksgiving table. Everyone loved it! Another keeper recipe. Thank you!

    • replied:

Amazing! So happy to hear that 🙂

  • says:

I made this with non dairy greek yogurt and vegan butter with a coconut whipped cream recipe and it was a HIT. So delish!

    • replied:

      Perfect!!

    • replied:

Thank you so much Julie! That answers the question I had!

  • says:

Hi Monique! I want to make this, but a friend of mine is allergic to nuts. Can I sub that cup of pecans for more gingersnap/biscoff?

    • replied:

      Yes, that will work!

  • says:

Darn my crust was burnt. Should I cover with aluminum foil?!

    • replied:

So sorry to hear that! Yes, feel free to cover it with foil to help.

  • says:

What about coconut sugar in place of regular?

    • replied:

I haven’t tested it, so I’m not 100% sure how the texture and flavor will turn out!

Loved this pie so much. I told my bf he had to help me eat it, but I ended up nearly eating the whole thing myself.

Super easy to make and SUPER delish!! This pie the crust isn’t too sweet and pie isn’t too tart! AC baked goods always on point

    • replied:

Absolutely! So happy you loved this one!

  • says:

My crust really had a hard time staying together, I used exact measurements (on a scale). Any tips? It tastes delish and was salvageable but would love to make again! Thanks!

    • replied:

Hi! Make sure you process the crust ingredients until very fine, and then press the mixture down SUPER well into your pan. That should help!

  • says:

This looks amazing! I am just wondering , based off of another review, are we supposed to add 1/4 cup of flour to the crust?

    • replied:

Hi! No, I re-tested and re-wrote this recipe to be even better, so it is correct as written 🙂

  • says:

I made this lemon pie and it was absolutely delicious!! Everyone raved about it.
It was such an easy recipe to follow and make. And when I say easy, I mean really easy!!
Simple straightforward direction and common kitchen pantry stables.
I am will be making this pie again soon!!

I have a question because I would like to make this for Easter this weekend. I only have 0% greek yogourt. Can I use that instead of 2%? Thank you!

    • replied:

Hi Caroline! Unfortunately, 0% yogurt won’t work in this recipe. Please use whole milk or 2% so that the filling sets properly!

  • says:

Hi! This looks amazing. Could I sub walnuts for pecans?

    • replied:

Hi! I wouldn’t sub walnuts, but you could do hazelnuts 🙂

  • says:

Hi there! I’m looking to bake this lemon pie this weekend, and wondering if I can do a meringue topping instead of cream? If so, would I put the meringue on top before baking it, or bake the lemon part first and then the meringue afterwards? Thanks!

    • replied:

Hi! Hmm I’m not sure with this filling that I’d recommend a meringue because the filling doesn’t set until it is baked. And you wouldn’t want to overbake the filling.

This was so flavorful and not overly tart. The crust is amazing and gives it a great nutty flavor. Was great for my birthday dessert!!

    • replied:

So glad you enjoyed! And happy belated birthday!

  • says:

I would like to make this, but before doing so I’m wondering why a review and your reply say there is flour in the crust? I don’t see flour listed in the ingredients or directions.

    • replied:

Hi! I recently updated this recipe to make it even better, so the current recipe is slightly tweaked 🙂

  • says:

I see another comment mentioning flour with a response to add a 1/4 cup of flour however I do not see flour in the ingredients or in the instructions. I’d like to make this pie however I’m hoping to clarify if flour is required and if so, during which stage is it added. If required can the ingredient list and instructions be updated please? Thank you.

Can I use honey or maple syrup instead of sugar?

    • replied:
