Fall in love with lemons
As I started to put together this giant list of healthy lemon recipes, I realized just how frequently I cook and bake with lemons. Lemon juice (and zest) just happen to sneak their way into everything from breads and muffins to dressings, main dishes, and of course, cakes, cookies, and bars. It adds freshness and acidity to things like dressings & marinades, plus adds bright flavor to sweet treats.

Glad to see I am not the only lover of lemons and so nice to see all of your lemon recipes together. I am a vegetarian so will not be using many of these, but your lemon blueberry smoothie, lemon blueberry baked oatmeal (a smash with or without the poppy seeds) and lemon blueberry zucchini cake (great with or without frosting, as muffins or as cake) are already favorites of mine. I see lots more here to choose from. In the last year, I have discovered how wonderful lemon is with pasta (particularly when spinach, chard or other greens are part of the mix) and how lemon lightens many veg and lentil soups. Yes, yes, yes! Thank you for all your wonderful recipes, lots are in my folder of favorites.
