Can I score this dough right before baking?

Cinnamon Raisin bread is my favorite thing. We used to live near this bakery in California that had an incredible cinnamon raisin pan de miel. I would slice and freeze it. But since we moved, I have been unable to find a good cinnamon raisin bread. I never even thought about baking my own. It seemed too hard and to be honest, I was slightly intimidated by baking bread.
This was the first bread recipe I have EVER baked. I have now made this twice. And it was easy to make and tasted incredible. You just have to plan enough time for the proofing.
I used King Arthur High Gluten flour. I followed your recipe exactly and it came out perfectly.
    Thank you so much!

    Thank you

  • says:

Ok so i made this bread and most of it came out fine but a few pieces came out where the swirl was gooey like laking out cinnamon butter. Is that ok to eat? Did I not do it right? Also I couldn’t spread the butter, it just ended up bring like blobs. Is that ok? Please let me know if would like to attempt this again!

    • replied:

It sounds like it wasn’t folded properly if the filling was leaking out. Give the video a watch as it can be a bit tricky to get right the first time! If you couldn’t spread the butter that likely means it wasn’t soft enough, make sure it’s soft and spreadable next time — sometimes I like to microwave it for 7 seconds at a time until I can easily poke it with my finger. It’s okay if it’s a tiny bit melty (just not too much!)

  • says:

Can I just add the brown sugar to the mixture instead of making the swirl. Thank you

    • replied:

That might change the texture, I would probably just recommend adding raisins and cinnamon to the bread and skipping the brown sugar if you do not want to swirl it!

I made this and loved it. What do you think about date sugar to sub for the brown sugar?
    Any tips on dough stickiness?

    • replied:

I haven’t tried with date sugar so I’m not 100% sure! If the dough is overly sticky, you can add a tiny bit of flour at a time to help.

I made the cinnamon swirl raisin bread for my hubby for Valentine’s Day. He loves raisin bread. This is by far the best raisin bread ever! So easy to make. I’m not a big fan of raisins but even I love the texture and flavor of this bread. Another winning recipe from your kitchen to mine!

What is the best way to store this bread after it’s made?

    • replied:

I store mine in a stasher bag, but you can also freeze slices (I like to freeze with sheets of parchment paper in between)!

I’m trying to avoid brown sugar and molasses because of the high acrylamide and high glycemic index. Can I use coconut sugar instead? I gave you five stars because that other bread recipe was amazing like your other recipes. I already know this bread recipe will be great.

    • replied:

Unfortunately I have not tested it with coconut sugar and I do not think the results would be the same!

Just made this today! So delicious and easy to make. I didn’t have rapid yeast so I used the regular and just made sure it bloomed first. Will definitely make it again!

This bread is unreal! So so easy and turned out perfectly! My husband and I are trying to resist eating the whole loaf in one sitting

    • replied:

I have a hard time also not eating the entire loaf in one sitting, haha! 🙂

  • says:

Can I shape, let rise and bake in a loaf pan?

    • replied:

      Wondering this too

      • replied:

I believe that you can I did this with one of her other recipes from the cookbook that is very similar. I baked uncovered in a regular loaf pan. I just paid attention to the top a little closer to make sure it didn’t get too brown.

        • replied:

I haven’t tried doing it in a loaf pan, the only issue would be that it can’t steam with a lid on so I’m not sure how it would work! You can also use a stainless steel pot, or anything that’s oven safe to bake this with a lid!

    • replied:

Hi Nancy! I haven’t tried doing it in a loaf pan, the only issue would be that it can’t steam with a lid on so I’m not sure how it would work! You can also use a stainless steel pot, or anything that’s oven safe to bake this with a lid!

      • replied:

Thanks, Monique! I’ll keep you posted! I have a large 3 qt Corning Ware square casserole with lid that I could try too if I don’t use the 9×5 loaf pan.

        • replied:

          Keep me posted, Nancy 🙂

  • says:

What would the overnight refrigerator process be? Can this be done by putting dough in refrigerator and baking the following day. Thank you.

    • replied:

Hi! I haven’t tried it, but my assumption would be to let it do the first rise, then transfer to the fridge. The issue with this bread is that you don’t want the cinnamon sugar to leak out of the dough once it is shaped (and that happens often in the fridge, which would lead to burning in the oven), so that is why I would not advise to use this method.
