I love baked oatmeal and these were very good. The warm spices and juicy pears are a perfect match. Next time I may add chopped pecans but they were delicious without. I love that I can enjoy something that feels decadent but is actually nutritious!

    Can I add ground flaxseed??

I think you could get away with 1-2 tablespoons!

Meal prepped this for breakfast this week (without the pears) and it was DELICIOUS! I love anything gingerbread. I almost left off the glaze, but I’m so glad I didn’t because it really makes the dish! Even my 6 year old, who usually hates anything with oatmeal, ate one and loved it! I will be making this again and again…so good!

So good! I made this as a baked oatmeal casserole and I just increased the cooking time.
