The completely FREE salad challenge is a month-long series of weekly salad recipes on Ambitious Kitchen starting 4/22 and as salad lovers, we couldn’t be more excited to share some of our favorite meal prep salad recipes with you.

For so many of us, it’s easy to grab something on-the-go for lunch when you haven’t prepped ahead and it’s also incredibly easy NOT to get enough veggies in your diet. That’s exactly why we decided to create the 4 week #AKSaladChallenge. We want to challenge you to make FUN nutritious salads at home that are packed with protein, fiber, veggies and FLAVOR.
