Hi. I love you. I really do. I even had to make you a healthy banana bread to say so. Fresh blueberries, thick rolled oats, and a whole lot of soul went into making this bread.
Plain and simple, you people have made me incredibly happy! Ambitious Kitchen now has over 20,000 views thanks to you. And, just look at all these pins on Pinterest from my blog. Like, Holy crap! I’m totally blushing.
On a serious and more personal note, I’ve been keeping busy. Bobbing my head at work to Katy Perry and forcing people to eat my baked goods every Monday morning is the new normal. Well, for me anyway.
I also decided that I’ll be moving out of the house I’m currently living in. To where you ask? I’m not sure yet. That’s on my to-do list, along with getting a new car too. It’s just really unfortunate I haven’t won the lottery yet to make all these things happen. That’s where recipe contests come handy! I’m going to start entering again, and cross my fingers that people like to eat really delicious things.
Right now, I’m even attempting to wrap my head around everything that I’m going to be cooking and baking this weekend so I go to the grocery store better prepared. I seriously love grocery shopping. It’s like a weird obsession. When I was in college, my best friend and I used to go at midnight just so we could enjoy the quiet and shop for hours. Strange? Yep.
Normal or not, I do make a good banana bread. Again, this is healthy and almost fat-free! I suggest making it on Sunday and grabbing two slices to go in the morning.
Oh, and if you’ve never had the blueberry and banana combination, prepare to be amazed!
Adapted from Weight Watchers
1 cup all-purpose flour
1 cup uncooked old-fashioned oats
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
3 bananas, very ripe
1/2 cup dark brown sugar
1 tsp vanilla extract
2 large egg whites
1 tablespoon plain greek yogurt
3/4 cup blueberries
Directions
Makes 10 slices.
What is the quantity for the blueberries in his recipe?

Will this work as muffins too? I like the convenience of being able to just grab a muffin and go. This sounds great and I have everything except the blueberries.

I’m sure these would be great as muffins, however I recommend not using muffin/cupcake liners and simply spraying the pan with cooking spray. Also try reducing the baking time and checking them around 18-20 minutes with a toothpick to see if they come out clean. Cupcakes/muffins generally take much less time than an entire loaf of bread.

Thanks for your help w/ this. For those that haven’t made these… simply put, I made into mini loaves for clients. I scarfed down one loaf, yes, true story. I split the second loaf for 2 clients. I had strawberries and thought “strawberries and bananas” (my personal flavor fav- I didn’t know there was already a recipe) moving on. I decided to make a second batch w/ the straw/ban. BUT didn’t TOUCH either loaf… had to give at least a full loaf to each client. Before I knew it, texts were coming in!!! Already in my recipe box! Thanks again M. great recipe.

Oh my goodness this looks delicious!! does it matter if you use whole eggs rather than egg whites?
Nope eggs should be fine. I would use only 1 though.
I just made this bread yesterday and it was phenomenal (I ate 3 slices yesterday)! I am not a baker, but thought that I’d give this a shot. So easy and so good. I brought it into work and people loved it. I’m thinking about making it into muffins next time or even testing out the cocunut banana bread you posted. Thanks for the great recipe.
Thanks Jen! It’s the best. I think you should try the dark chocolate raspberry oatmeal banana bread next; it’s my favorite! Feel free to substitute other berries and/or leave out chocolate chips if you’d like. I think you’ll love it.

Hello, first time visitor to your blog. I wanted to thank you for such a wonderful recipe. Not only was this loaf delicious and easy it’s HEALTHY!! I will be making this again and again:) I did end up adding a tbs of coconut flakes and 1/2 tbs of honey and 1 tbsp crushed almonds as a topping. Looking forward to cooking through the rest of your blog with you and your other subscribers.
Another first time visitor-Made this last night but swapped out half the flour for vanilla ice cream flavored protein powder. I wasn’t sure how it would turn out (never tried baking with protein powder before…) but it was great! Will definitely be making again, and checking out your other recipes!

Do you think adding protein powder would change it up that much?
I’m not sure, I really don’t bake with protein powder that often. Maybe add a little more liquid?
Great recipe! Of course all foodies must adapt…i dont like to use any sugar or sweeteners in my baking. I used 1 cup spelt flour, 1 cup oatmeal, same for baking powder, soda, salt, cinn, 4 small ripe bananas, 2 egg whites, 1 container of nonfat plain greek yogurt, and 1 cup blueberries. used muffin pans – made 15 muffins at 89 cals, under 1 gram fat, 17g carbs, 3g fiber, and 4 g protein per muffin! New to your blog and I love it!

Yum! I just made this with a few changes. Used stevia instead of sugar, used 3/4 cup of flour and 1/4 cup ground flax seed (would have used whole wheat flour but was out), and used 1 1/4 cups blueberries. Super moist and delicious. Can’t wait to see how much better it tastes in the morning. Thanks!
