This soup is spectacular! I couldn’t get enough of it after the first time I made it so I bought more tomatoes and made two more batches ate one and froze the other. I added a piece of Parmesan rind and let it simmer at the end. The flavour is fantastic. Paired it with a grilled cheese sandwich! Thanks for sharing this fantastic recipe.

I love tomato basil soup but have never made it. I perused through so many recipes until o found this one to try. OMG! It is the BEST soup! I used my garden tomatoes & Basil. The only thing I did differently was use minced garlic & rubbed it on top of the tomatoes with olive oil before roasting. I used a little heavy cream & sprinkled shredded Parmesan cheese on top. It was the most fragrant and tasty soup I think I’ve ever had. Getting ready to make more to share. Thank you!

We traded quail eggs for vegetables and part of that was 4+ pounds of Roma tomatoes.

I had never thought about roasting tomatoes and it was amazing! they were so sweet!

The garlic needs much less time than the tomatoes.

And I added a full quart of vegetable stock and it is still thick!

    And delicious.

The soup is delicious! I had so many garden tomatoes that I made a triple batch. I roasted the tomatoes and garlic, and caramelized the onions just as the recipe said. I added the basil, and oregano. Then to finish I used a total of 2 cups homemade chicken stock and one cup heavy cream. I paired it with grilled cheese. Yum!

This was delicious, using my fresh garden tomatoes. I used minced garlic from a jar; vegetable bullion cube for the broth, and a dash of almond milk. I also had fresh oregano from the garden, so put that in last. I’ll be making this again, and freezing it for the winter!

This was one of the best tomato basil soups ever and I have made many!. I added half a can of full fat coconut milk at the end. To keep it thick I added 2 teaspoons of better than boullion vegetable base for flavor and only a tiny bit of water. I also carmalized the onions in olive oil and plant based butter. Super

Monique I must say that when thinking about recipes I usually go to your website first because they rarely disappoint! This recipe is so savory and fresh, even when I made a small batch it just really hit the spot. My caramelized onions were a little more brown than I would have liked (but that’s flavor, right?!) so I should have cooked them on low to begin with but that’s on me! It was great using my fresh homegrown tomatoes rather than opening up a can as well. I will definitely make this again. Thanks for another great recipe…

I have Never been much of a tomato soup person but This is Wonderful !! Second time I’ve made it in two weeks ! I probably doubled the recipe and I used regular tomatoes since Those are Plentiful right now…Im waiting patiently for my romas / paste tomatoes to ripen…I also roasted some Red peppers with the tomatoes. After blending, I Added a T of brown sugar 2 tsp of Chicken flavored BTB with 2 cups of water. I know it’s a little tweaked from Your recipe but……I just add a splash of milk / cream and a sprinkle of Parmesan when it’s in the bowl and Enjoy ….. It’s REALLY REALLY Good !

I have made this soup many times in a Church kitchen. The last time for 120 prople, using over 60 pounds of tomatoes. I am told numerous times that is the best soup they have ever eaten. Passed the recipe on to many. Thank you.

I basically followed the recipe and it was and it’s incredible. I did add/substitute a few things.
    – used 2 28oz cans of Organic San Marzano Tomatoes 🍅 (Pulled the plum tomatoes out of the sauce, cut them in half a roasted them with garlic, olive oil, salt and pepper. Add the sauce in the two cans to the soup with the blended roasted tomato/garlic.
    – Used nearly 2 cups fresh basil from our garden
    – Blended onion and basil with a little vegetable broth, separately blended the roasted tomato’s and garlic.
    – I added a little sugar to tone the tomato acidic taste
    – Added 1/2 cup ground Romano cheese and also 1/3 cup or so crème fraiche.
Best tomato soup ever and I have cooked a lot of various recipes.

I make many different soups however when I want a good comfort soup I make this one. I increase the serving size typically with 9 lbs tomatoes and everything else in proportion. I make enough to freeze in pint containers. When I make a big batch which I’m making now, I give my neighbors several pints. They are ecstatic and that makes me very happy. Thank you for a terrific recipe.

Way too much onion. I won’t make this again. Sorry.

    • replied:

Sorry to hear that! Did they get nice and caramelized? That should just add a lovely sweetness instead of an “onion” punch of flavor to the soup.

This was the most delicious tomato soup I have ever tasted. Like you, I never liked tomato soup until I tried this recipe and what a difference a roasting makes. Thank you for opening my eyes and stomach to this incredible soup. I did not alter the ingredients. The only thing I had to do was to remove the garlic early as it was starting to over-roast. Otherwise everything went as per instructions.

Hi, I made this recipe last night and my gosh, was it a winner! The best tomato soup I’ve ever had (and made)! The addition of the caramelized onions is next level in making it hearty and adding a touch of sweetness to the soup- don’t skip this part!
I’ll be making this on repeat this winter. Thank you for the delicious recipe!
