The moment is finally here. It’s time to say goodbye to Minnesota for good.
Eating Teddy Grahams is a bit comparable to leaving home really. Bittersweet. I can’t think of any other way to describe it.
Teddy Grahams are adorable, and yet so delicious! Even though devouring their cute little bear bodies is a little devastating, the incredible taste and satisfaction makes it all worth it.
Okay so that’s a stretch, but you get what I mean right? I’m completely weird.
As I drive to Washington, D.C. tomorrow a stream of thoughts and memories will be pouring into my brain. It’s honestly quite weird to contemplate leaving the place I’ve grown up, the people I care the most about, plus that certain sense of comfort.
I take with me a feeling of independence. Adventuring to a new destination accompanied with a sense of wonder. An excitement to explore the unknown. Materials in my Jeep include my donut pan, several stuffed suitcases, and way too many pairs of shoes. Just the essentials!
It will feel good to just be, you know? I’m 23. I’ve got the world ahead of me. This nervous energy and stress will surely pass. I’ll stop dyeing my brown and remember to workout every morning. The adrenaline bursting through my heart will calm, and I’ll gain perspective. I know this to be true.
Of course I’ll miss a lot of things too! Seeing that Minneapolis skyline. Yoga sculpting. Enjoying picture perfect summer weather on the lake. Fried things on sticks at the State Fair. That ‘Minnesota nice’.
I sure won’t miss those hot dishes or bone chilling weather though.
So yes, bittersweet is quite the perfect description.
Of course as a birthday and going away present I needed to make something special.
Making a chocolate Teddy Graham pie crust was on my mind. This was my day after all! Giving presents to yourself is always a good idea.
Double the chocolate means double the fun. Chocolate Mousse filling!
I remembered that whip cream and sprinkles make everything better. See?
You must know when eating this pie, all is good.
Creamy chocolate makes you forget your worries. Teddy Grahams make you just smile.
Sorry I can’t tell you my wish though.

Chocolate Mousse & Teddy Graham Birthday Pie
Ingredients
- For the crust:
- 2 cups finely crushed chocolate Teddy Grahams
- 6 tablespoons melted butter
- 1/4 cup granulated sugar
- 1/2 tsp salt
- For the pie:
- 1 pint heavy whipping cream
- 1/4 cup granulated sugar
- 8 ounces whipped cream cheese
- 1 cup powdered sugar
- 1/4 cup dutch cocoa powder
- Sprinkles for topping if desired
Instructions
- To make the crust: Preheat oven to 350 degrees F. Mix Teddy Grahams, butter, sugar, and salt together. Pulse in food processor until very crumbly.
- Scrape into 9 inch pie pan and use a spoon or fingers to press into the pan. Make sure it is even, then bake in oven for 10 minutes. Take out of oven and place and wire rack to cool.
- To make the filling: Place heavy whipping cream and granulated sugar in large bowl. Using an electric mixer, beat until heavy and thick.
- Take 1 cup of the whipped cream and place in refrigerator this will be used as a topping later.
- In a separate large bowl, combine the cocoa powder, whipped cream cheese, and powdered sugar until creamy. Slowly fold in whipped cream until well combined. Pour chocolate filling in pie pan.
- Next, take out your whip cream from the refrigerator. Carefully spread the whip cream evenly over the top of the chocolate mousse filling. Top with sprinkles and extra teddy grahams if desired.
- Place pie in refrigerator for 4 hours before serving. Serves 9.
