    Super easy to prepare!
I substituted corn tortillas for the flour tortillas, added fresh spinach, cilantro and diced green chilies, My house smelled wonderful. The flavors blended well together. I loved the refried beans creamy texture paired with the roasted vegetables. So yoummy and delicious!

This was the first recipe I made after deciding to go vegan (skipped the cheese), and it made my transition so painless. I absolutely loved this comforting recipe and looked forward to eating it daily until every bite was gone. I had some extra cauliflower rice mixture and put it into a layer of your https://www.ambitiouskitchen.com/vegan-butternut-squash-lasagna/ . I loved the original and modified of that too! Thanks so much for sharing such delicious recipes. My sis-in-law is the best cook and baker I know, and she let me in on her secret of sticking to your blog!

I don’t usually comment on recipe posts, but this one has become an instant staple in our meal rotation and it’s so, so good! My wife detests cauliflower, so we use eggplant instead. The flavours in this are insane and it’s so fulfilling, real comfort food (without the overload of calories comfort food tends to have..). Thanks for this recipe!

Instead of tortillas I used polenta to make the crust for this and it was great

I loveee this post. I am living abroad without a kitchen and I have spent the entire day going back through your recipes and saving things to make when I return to the states.

Also- I have that pie scooper and the pie plate that goes with it! Anthropologie? 🙂

I don’t know what I did wrong, but I followed the recipe exactly, and used a spring form cake pan and couldnt even finish the second layer. I had to use another baking container… Pretty tasty tho

    • replied:

Oh no, sorry you had trouble! Maybe your veggies were extra big? Not sure! Either way, I’m glad you thought it was delicious!

Tried this recipe out tonight with a few subs for what I had on hand – instead of sweet potatoes, cauliflower and sweet peppers I roasted beets, red potatoes, mushrooms, carrots and onion along with the zucchini. It still tasted amazing. Thanks for posting. I was really in a Mexican mood today and this satisfied me completely.

Monique, you have to visit Los Nopales in Lincoln Square! The food is phenomenol. Ingedients are always fresh. Very high quality Mexican cuisine. And, the staff are all very warm and welcoming.

This looks delicious! Sweet potatoes and black beans is where I head also for vegetarian Mexican. And in Chicago? Anything by Rick Bayless is where I would go! But you probably have heard that a bazillion times.
