    Hi Monique,
I am new to your site – the recipes all look awesome. Can these cups be prepared the night before and packed for lunch.

    • replied:

Hi Catherine, welcome to Ambitious Kitchen! Absolutely – just add the guac right before serving, or leave off. Hope you find tons of recipes here that you love!

Can’t wait to try these. The Plantains got me on this one, wish there were more recipes with them. Love Bush’s beans with chili sauce. I do wish your nutritional values included sodium. Thank you for the recipes you post!

Hope you love them! The plantains + savory chili beans are such a great combo in here. Everyone’s ingredients can vary in terms of sodium, which is why I leave it out. Let me know if you give these a try!

I also made these for the Super Bowl (yeah Patriots!!) and they were really yummy. I did use whole grain tortillas as I thought that might be even healthier but they sort of fell apart a bit. So next time definitely regular flour wraps.

Love it! And yes, the regular flour does hold up a bit better. Glad you enjoyed them regardless!

Made them for the Superbowl and they were a huge hit. Thanks!

Great! Glad everyone liked them 🙂

Aren’t they cute?? They’re still delicious without cheese or with vegan cheese! 🙂

How adorable are these cups! It would probably be incredibly easy to demolish at least three or four of them in a go. I’d definitely have to omit the cheese or substitute out the vegan cheese if I try this recipe out!
