Q: For mini-muffins, do you really cook at 400 degrees? Regular muffins and the loaf pan are both cooked at 350.

    • replied:

      Yes, that’s my preference!

Wow! I misread oat flour for oat bran and noticed as I was measuring… so I did 2/3 cup of oat bran and 1/3 of whole wheat flour. I also did not have natural peanut butter so i split regular with almond butter which is more liquidy. Came out great nonetheless. Another great muffin recipe! Thanks

Here to report that I did not heed the advice to not substitute the flour and clung to the loose suggestion of using chickpea flower. It worked! Haven’t had the original, but these are wonderful!

    • replied:

I’m glad that worked out well! Perfect snack 🙂

  • says:

Can I substitute applesauce for bananas? How much?

    • replied:

I wouldn’t recommend it in these because the muffins won’t have much sweetness to them at all!

Just started making these, they are Amazing!! I currently have gestational diabetes and these are the perfect treat with my morning yogurt that don’t make my blood sugar spike! I skip the chocolate chips and add a scoop of unflavored protein powdered and they are perfect! My kids love them too! Thank you for sharing this recipe!!

Absolutely! Glad you love them (and that they’re a hit with the kiddos!)

There really isn’t a muffin on your whole site that I don’t like. These taste delicious and my kids all loved them.

I’ve tried these twice now. Both times my kids were a hard pass on them

Sorry to hear that! Was it the texture? Sweetness?

We’ve really been loving these muffins as a pre-workout snack! My 4 year old also has been requesting them! I swapped regular peanut butter for powdered peanut butter and did half the amount of choc chips and they turned out sooooo good. I also added one scoop of vanilla protein powder. Thank you for sharing such delicious recipes ❤️

I’m glad those swaps work out well! Such a great pre-workout snack 🙂

I don’t always love the texture when a muffin uses oat flour but figured my hubby could have them for work if I didn’t like them haha. These were great though! The texture wasn’t weird, the flavor was just the right amount of peanut buttery. They were so quick to throw together. Love that they were healthier. Will make them again for sure.

I was skeptical, and these are the best refined sugar free banana muffins I’ve had. THANK YOU! I see some of the reviews say they’re dense, but I didn’t find them any denser than a regular banana muffin/banana bread. Just don’t over mix! Delicious.
