After a week of all things Thanksgiving followed by a week-long cookie party, I thought it was the perfect time to get back to basics with a delicious, easy, meal-prep-able breakfast. CHUNKY MONKEY BANANA BAKED OATMEAL is calling. In all caps, because it’s just that damn good.
This chunky monkey banana baked oatmeal is seriously the best way to wake up in the morning. It’s easy to make, packed with whole grains, healthy fats & protein to keep you satisfied, and it pretty much tastes like your fav banana bread.
Sidney & Viggo loved every last bite (even without chocolate chips) of this so it’s perfect for kiddos, too! Prep this pan of breakfast goodness for the week (it’s freezer-friendly) and add the chocolate chips for good measure. Enjoy!
What is baked oatmeal?
Instead of cooking oats in hot water or milk like traditional oatmeal, we’re adding a few special ingredients and baking it right in the oven. The result is like a delicious mix of tender oatmeal and banana bread – a sweet, yet nutritious, healthy breakfast oatmeal you’ll love.
Baked oatmeal is perfect for meal prep; you can make it ahead of time and place it in the fridge for eating throughout the week, or freeze it for later!
Ingredients you’ll need for banana baked oatmeal
This easy banana bread baked oatmeal recipe uses simple ingredients with delicious mix-ins you’ll love. Here’s what you need to make it:
- Bananas: you’ll need 3 ripe bananas (with lots of brown spots!) to naturally sweeten the baked oatmeal and give it the right texture.
- Eggs: this recipe calls for two eggs to help the baked oatmeal bake up properly. I think flax eggs could work well, but I haven’t tried it. Let me know you do!
- Sweetener: along with the bananas you’ll just need a couple tablespoons of pure maple syrup.
- Baking essentials: you’ll also need vanilla extract, baking powder, cinnamon & salt.
- Rolled oats: the base of this banana baked oatmeal is made with rolled oats. Feel free to use regular, old fashioned rolled oats or gluten free oats.
- Mix-ins: the delicious, “chunky monkey” flavor comes from unsweetened shredded coconut, chopped walnuts and chocolate chips. Feel free to use dairy free chocolate chips!
Optional recipe swaps
- For the maple syrup: you could also use a couple tablespoons of honey, coconut sugar, or brown sugar.
- For the walnuts: feel free to use pecans or omit the nuts if you’d like.
- For the chocolate chips: you can also leave out the chocolate chips or swap for blueberries or raspberries!
Can I use steel cut oats or quick oats?
I would not recommend using steel cut oats or quick oats in this banana baked oatmeal recipe as the texture will be much different than with regular, rolled oats.
Can I make this banana baked oatmeal vegan?
You can try using a flax egg or two in this recipe, but please know I haven’t tested it so I can’t be certain, although I think it could work well!
How to make banana baked oatmeal
- Prep your pan. Preheat the oven to 350 degrees F and grease a 9×9 inch pan with oil or cooking spray to prevent sticking.
- Mix your wet ingredients. Add all of the wet ingredients to a bowl and whisk them until they’re well combined. Make sure to mash your bananas first though!
- Add the dry. Add all of the dry ingredients to the wet ingredients and mix well.
- Mix-ins. Fold in the shredded coconut, walnuts & chocolate chips.
- Bake it! Pour the banana baked oatmeal mixture into your pan and bake it until the edges are slightly golden brown.
- Top it. Add extra banana slices, chopped walnuts and a drizzle of maple syrup! Sometimes I love to serve it with a little warm or cold coconut or almond milk.
Ways to serve baked oatmeal
One of the great things about baked oatmeal is that it’s delicious served many different ways:
- Serve it warm with maple syrup drizzled on top.
- Add a dollop of almond or peanut butter for extra flavor (and a boost of protein!)
- Enjoy warm and pour some milk right over the top just like cereal. The milk becomes like chocolate milk thanks to the chocolate chips!
Storing & reheating tips
- In the fridge: be sure the banana baked oatmeal has completely cooled, and then cover your 9×9 inch pan with tinfoil before transferring it to the refrigerator. It will stay good covered in the refrigerator for 3-4 days, and you can reheat individual slices in the microwave for 30-60 seconds. You can also store individual slices in airtight containers for quick, on-the-go breakfasts.
- In the freezer: once the baked oatmeal has completely cooled, cut it into 6 squares and wrap each square in plastic wrap and tinfoil. When you’re ready to eat it, place the unwrapped frozen square of baked oatmeal on a microwave safe dish and microwave it at 30 second intervals for 1-2 minutes. If you’d like to freeze the entire banana baked oatmeal for later, simply reheat it in the oven for 20-25 minutes at 350 degrees F while it’s covered with tinfoil.

Chunky Monkey Banana Baked Oatmeal
Delicious chunky monkey banana baked oatmeal packed with healthy fats from coconut & walnuts. This easy, healthy banana baked oatmeal recipe is naturally sweetened with bananas and pure maple syrup for the perfect breakfast! Add chocolate chips to make it extra special.
- Wet ingredients:
- 3 ripe bananas, mashed (about 1 ⅓ cups mashed ripe banana)
- 2 eggs
- 1 teaspoon vanilla extract
- 1 (15 ounce) can light coconut milk (about 1 ⅔ cup coconut milk)
- 2 tablespoons pure maple syrup
- Dry ingredients:
- 2 ¼ cups gluten free rolled oats
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup unsweetened shredded coconut, plus 2 extra tablespoons for topping
- ½ cup chopped walnuts
- 1/3 cup chocolate chips (feel free to use your favorite!), plus 2 tablespoons for sprinkling on top
Preheat the oven to 350 degrees F. Grease a 9x9 inch pan with oil and set aside.
In a large bowl, whisk together the mashed banana, eggs, vanilla, coconut milk and maple syrup until well combined.
Add the dry ingredients to the bowl with the wet ingredients: oats, baking powder, cinnamon and salt. Mix until combined, then fold in shredded coconut, walnuts and chocolate chips.
Pour mixture into prepared pan and smooth top. Sprinkle with reserved shredded coconut and chocolate chips. Bake for 35-45 mins or until the edges are slightly golden brown. Remove from the oven, allow to cool for 10 minutes, then cut into 6 slices and serve. Top with extra banana slices, a drizzle of maple syrup and chopped walnuts. Serves 6.

Can I use another form of milk or does it need to be coconut milk? Would I use the same volume if I subbed it?

I made this for breakfast and man…was it delicious!!! I switched out the coconut milk for almond milk. I served it warm with some fresh raspberries….also cut in to 8 slices because they were pretty big. My huband loved it too!

This is really, really good – it tastes like dessert but it’s healthy enough to eat as a snack or for breakfast too. I only have a 9×13 pan so I did 1.5x the recipe and it came out perfectly at 45 minutes. I used some regular milk since I only had 1 can of coconut milk, and pecans instead of walnuts since that’s all I had. LOVE this!

I made this last night as breakfast for the week and I absolutely love it! It’s sweet and indulgent yet healthy, and the chocolate mixed in with all this goodness makes it the perfect breakfast to end 2020. Absolutely delicious. I used 2 tbsp chia seeds in the wet mixture and let sit for about 5 mins while I gathered and mixed the dry ingredients. Also added raisins because I’m obsessed with raisins. Came out beautifully.

This was a delicious recipe. My family all loved it. I did use sweetened coconut versus unsweetened. I also increased the chocolate chips to a half of a cup. by doing so it was sweet enough I didn’t need to use the maple syrup drizzled on top. My husband liked it best though with the maple syrup also.

This is my weekly breakfast meal prep. The bananas sweetened it enough for me so I omit the maple syrup and choc chips. Instead I add a couple tbsp of cocoa powder which is amazing. Love topped with a swish of almond milk each morning. Yum! Another amazing breakfast recipe!

Oh my gosh, so good and addictive! My MIL made this for me (like 5 days in a row) postpartum. Hearty and nutritious, bonus – my toddler and 4 year old loved it too! Loved it with a big scoop of peanut butter on top.

Since I found this recipe its been in my fridge I would say 90% of the time. I didn’t add any syrup or salt and I swap unsweetened almond milk for the coconut milk although the time I made it with coconut milk, it was absolutely delicious. It made me feel temporarily like I was having breakfast in Hawaii. I imagine you can use any kind of milk or add ins, but its great as is. I also now add some PB2 on stop. So delicious!
I combined this with the zucchini bread baked oatmeal: added about 1/2 cup peanut butter, two shredded zucchinis, and used soy milk in place of the coconut milk. I also skipped the maple syrup, sweet enough with super ripe bananas and the added chocolate chips. SO tasty! Been eating it warmed up with some greek yogurt all week.

Our family loves, loves this recipe! We discovered it during quarantine and it became our go to breakfast for weekends and remote learning mornings. It stores beautifully for reheating throughout the week (although it rarely lasts more than a few days). The recipe as shown is pretty perfect – we love to add warm almond milk and berries on top to make it even better. My teen girls now make It on their own.

Very yummy and super easy to make. I cut it into 9 servings instead of 6 and that was just the right amount. It would be wonderful with added syrup and bananas, but I am trying to lose weight, so I resisted lol. This way it was totally easy to budget into my daily calorie intake. I’ve been making this chunky monkey banana baked oatmeal for months now for breakfast and I love it so much. I usually make a lot and freeze the rest so every morning I just thaw one, serve it with some warmed blueberries and yogurt. 🤤 🤤🤤🤤

ANYWAYS. Made this, love this, will make this on a regular basis. I used an 8×8 pan and this turned out amazing. I’ve been looking for a way to spice up my relationship with oats and this was SO dang good. Super easy to make and I love that I can pull a slice out of the fridge for breakfast during the week.
Next time I’ll add chia seeds for an extra bit of fiber 🙂

(in fact, ALL of your recipes that I’ve tried, oatmeal or otherwise…) I made this with butterscotch chips and without added coconut, because that’s what I had/didn’t have on hand, and it was absolutely delicious. I made this dish for my husband who is a very picky eater for a man his age. He ate more of it than I did, it was amazing! We opted not to do any of the nuts and I added blueberries instead and it was incredible. I am currently making it again for my family who is here for my baby shower. Made this for breakfast this morning. I subbed almond milk, and Bob’s egg substitute for the coconut milk and eggs. I omitted the coconut flakes and maple syrup/sugar. I only used 2 c rolled oats, added 1/4 c almond flour and 1/4 quinoa flour and 3 TBLS hazelnut butter. Family loved it! Added chopped hazelnuts and vegan chocolate chips (Guittard). Super easy recipe. I will keep experimenting with it. Winner! Thanks!!

The pan in the video looks bigger than a 9 x 9. Do I adjust cooking time for a 9 × 11?
It’s actually an 11×7, which comes out the same as 9×9. The baked oatmeal may come out a bit thin with a 9×11 so I’d recommend reducing the baking time a bit!

Made this preparing for baby number 2. i know Moniques recipes are all good and this is just another good one. I have been making her “skinny banana choc chip muffins” for years. they are always in my freezer. this bake is a nice change up from muffins and really yum and so easy!!! i use whole milk because i drink that not coconut milk. everything else the same

This recipe is soooooo good! My husband (who doesn’t normally do the cooking) made it for me for Mother’s Day breakfast. Delish! He prepped it the night before and made it without the chocolate chips (I’m not big on chocolate for breakfast). It might be a new favourite and staying in the rotation!

I wouldn’t recommend using quick oats in here, as they’d get pretty mushy. Sorry!
This recipe didn’t work at all. I followed it to a T, didn’t use any alternate ingredients. I used a 9×9 pan even though the pictures are of a 9×13??? It is gloopy, not baked through, and almost burnt on the outsides. I had to let it bake almost an hour before pulling it, but it still wasn’t baked on the inside. This was a waste of ingredients, time, and patience.
Hi, Juliet. So sorry to hear it didn’t work out. I usually use a 9×9 pan and have never had that issue with it not cooking through/burning on the outside. What material is the pan that you used? And you baked it at 350ºF?
This baked oatmeal is oooooooooh so delicious!! It’s almost like a moist, chewy oatmeal cookie. I made the recipe using 1 T. Splenda and 1 T. maple syrup; and I didn’t have canned coconut milk so I used the kind from the carton.
I really thought the Orange Creamsicle oatmeal was my favorite, but this Chunky Monkey version is maybe even better!!

This recipe comes together so quickly and easily. It’s the perfect on-the-go breakfast or snack. I used almond milk instead of coconut milk because it was what I had on hand. I also baked mine in a 12×9 glass pyrex for 35 min. I cut them into long granola-sized bars and stored half in the fridge. The rest went in the freezer.

Love this baked oatmeal! I portion it out and freeze it. I had a slab of it today and added some chocolate protein powder mixed in with almond milk on top. So delicious and filling after my workout.
Best Breakfast Food Ever! Have made multiple times for family (gluten and dairy issues) and finally something we all love and can eat together. Taste is exceptional. Love the texture too. I omit maple syrup in recipe (unnecessary added sweet in my opinion) and serve with a drizzle over each slice. I use almond milk instead of coconut and blueberries instead of chocolate. Oatmeal, coconut, blueberries, walnuts…doesn’t get any better than that!
I made this again today to stash in the freezer for when our baby arrives! I’ve made this several times following the recipe as written, using all of the add ins, and it always turns out fantastic. I typically store some in the fridge for the week and freeze some for another week. Take out a piece from the freezer the night before and pop in the microwave in the morning- so easy and delicious! One of my favorites for breakfast 🙂

I make this at least once a month and eat throughout the work week. Perfect use for those bananas you don’t get around to eating! When I wake up in the morning, I legitimately get excited knowing I have this yummy breakfast to look forward to. I typically warm a slice in the microwave for ~40 seconds and drizzle with maple syrup. So delicious and so fast!

Absolutely one of my fav breakfast recipes! I always sub blueberries for the chocolate chips and it still comes out fantastic. Perfect for meal prep during the week. I even cut the servings and froze them for coming home from the hospital with baby. It reheats so well!

This recipe is a weekly staple in my house. It’s delicious, simple and easy to make substitutions. I usually add ground flax and hemp seeds, sometimes swap the chocolate chips for a fruit (strawberries, blueberries), skip the maple syrup (bananas make it sweet enough for me), etc. It’s amazing warm or straight out of the fridge!

This is what I use for my base of all banana baked oatmeal. I usually use berries for my daughter and I and chocolate chips for my husband. I do tend to make it slightly sweeter for the berries version so I add a little more maple syrup and cinnamon but other than that love this!

Was hoping to make this as a muffin (easier to portion and freeze for me). Any suggestions on how that might effect bake time? I’m not so great at judging when baked oatmeal is done, so even an estimate is helpful. Can’t wait to try!
I’m not quite sure as I haven’t tried it, but you can just bake them until the edges are slightly golden brown and middles are set 🙂
Absolutely delicious! My kids usually do not love my baked oatmeal, but this was a big hit with the whole family. My Mom does not like oatmeal, but loved this. I used almond milk, because I was out of coconut milk, and chopped pecans sprinkled on top instead of walnuts. Thanks for this recipe!

Hello All your recipes look so yummy but when I look at the nutrition the calorie count is crazy high. Is that per serving or is that the whole recipe?
I am a bit of a baked oatmeal snob,,,,i have tried so many in the hopes of perfecting my morning mealprep, but I don’t normally leave reviews, However, in this case I just had to comment on how good this is. I made a few tweaks based on what I had in the house….I used Almond milk instead of coconut milk, Also used very small amount the following:coconut, pecans, cranberries, mini marshmallows (cut in half) and sugar free chocolate chips. I also sprinkled the top with cinnamon sugar and the house smelled amazing as this cooked! Tasted even better right out of the oven! I will definitely be making this again. Thank you for sharing.

I have been following you for awhile love all your recipes. I was looking for a baked oatmeal and came across your Chunky Monkey baked oatmeal bread. AMAZING is what I have to say. Made it for Christmas morning and since then my family has been baking it for breakfast. They freeze it for a quick breakfast on the go. I have made it several times myself. Why light coconut milk instead of regular canned coconut milk?
You can use either! I often use light just to lighten up my recipes, but regular would also be great in here.

I just made this for my family brunch on Family Day. It was perfect for family members who don’t eat gluten, and I added a few extra chocolate chips…it was a huge hit and everyone loved it. YUM! Another delicious recipe. I omit the chocolate and put in frozen berries instead before baking. I make this as a weekday freezer staple and is very good even re-heated in the microwave!

Perfect yummy grab and go breakfast! Like an oatmeal casserole, but firmer. It was great reheated in the microwave with a bit of peanut butter.
I thought it time to finally review this recipe after making it at least 10x! This recipe is absolutely wonderful, especially if served with a bit of peanut butter on top. I have made it with all types of milk, all turn out just fine except full fat coconut milk – that I found to be too rich.
I just made this! So easy to put together and really, really delicious! A new way to use up my ripe bananas. I’m going to make this for a family brunch.

This is so freakin good! I made it for my family and they loved it! Its quick, easy and nutritious. I always add 1 heaping scoop of @toneitup Vanilla Plantbased Protein and a bit more liquid and it turns of perfect everytime! Cut into 9 squares and everyone can take in their lunches.

This is the best baked oatmeal recipe! Great as is but if you love rice pudding swap out the chocolate chips for raisins and you will NOT be disappointed! YUMMM! My new favourite add in. I also sub egg replacer for the eggs as I am allergic.

Made this exactly as instructed and popped it in the fridge overnight. Stuck it in the oven as I preheated for about 50 minutes and it turned out perfectly! By far the best baked oatmeal we’ve ever tried (and we’ve made a lot)!

Made this in a pan once and then in silicon muffin molds. Substituted the coconut milk with oat milk and increased the syrup to 3 tablespoons. Wonderful results and came out great as muffins!

I made this on our first week of trying recipes from Ambitious Kitchen (It came with the 1 week meal plan). My crew has loved it! I had to make it again for week two. I can’t believe how well it holds up if you make a double batch as well. We bagged individual servings so anyone could grab a bite when they were ready for breakfast. I had it with and with out the maple syrup and both ways are really great.

Sure! I haven’t tried it, you will definitely need to adjust the time, I would suggest maybe 20 minutes? But keep an eye on it and watch it closely as you will need less time for muffins. Enjoy.
Made this up a few days ago! My daughter had sent me the recipes and I’m so glad she did. Enjoying the Chunky Monkey Oatmeal very much. Nice alternative to the regular Banana Breads. Easy to make, very tasty and filling. Only thing I did different was use Almond Milk as no one in my area carried coconut milk. Recipe is a keeper and definitely a make again! 😊

I have made 3 of the baked oatmeal recipes from your website now. All very good. I made this one tonight. I used overripe bananas that had previously been frozen, subbed regular 2 percent milk for the coconut milk, omitted cinnamon and used Lily’s sugar free chocolate chips. I am eating it warm from the oven as I type this. I am officially a huge fan of baked oatmeal now. I eat a small portion when I want something sweet instead of indulging in something far less healthy.
My family loved the banana bread. I left the choc chip out and it was fab. I also did muffins and added raisins. Both versions are great. Thnx for sharing
This is my third time making this recipe – I love it! I didn’t have any walnuts this time so I just left them out. Do you recommend storing this in the fridge to eat over a couple of days (if it lasts that long, that is!)?
