Can I use coconut sugar in place of brown sugar? and can I use oat flour instead of oats? will the texture and taste be same?

    • replied:

Coconut sugar should work just fine! I wouldn’t recommend swapping the oats because the texture will be different.

Just made these. I used an 8in pan as suggested and did the max cook time. It was browned and crisp on top but after letting it rest, it was completely gooey in the middle. I’m wondering why? I did everything as the recipe said. Popped it back in the oven for a bit longer.

Hmmm can you tell me more so I can help? Did you make any changes to the recipe otherwise? Did you bake in a skillet or in a pan? Did you weigh your ingredients?

This recipe is so incredibly delicious! The batter was insanely good and the finished cookie even better. Sooo good, and I’m so excited to add to my recipes that I can make for my gluten- and dairy-free mom. Your recipes are such a great balance of healthy-er swaps while still being absolutely delicious – my favorite kind of desserts!

Delicious! My husband doesn’t like butterscotch so I left it out…still good…but bet it’s great with the butterscotch too!

I’m glad it was still good!
