Things I’ve done lately:
1. Tried going vegan for 3 days. Didn’t work because I love eggs for breakfast.
2. Tried going paleo for a day. But then I ate a pita and some hummus.
3. Chugged almond milk from the carton and scarfed down one of these muffins slathered in almond butter right before bed. I think I can probably stick with this one.
So I mean I’m not really trying to do a different diet daily, I swear. I actually received some vegan meals to try out for three days; they were delicious and filling but I know going vegan just isn’t for me. Like I said, I love eggs wayyy too much.
Next I considered doing a somewhat paleo diet because I’m seeing a holistic doctor and she suggested it. That’s great and all, but I’m not about to give up greek yogurt or oatmeal. Or FRO YO! Those are basically my baking and dessert staples. Plus who doesn’t love a buttery chocolate chip cookie every now and then? I say, do what’s best for your body, mind and soul.
I will always be convicted to a balanced approach to clean eating that’s creative and allows flexibility. My favorite part about having this blog is being able to experiment with different flavors and ingredients (paleo/gluten free/dairy free/vegan/clean eating). And since a lot of you fell in love with my coconut flour banana bread, I decided to whip out my coconut flour again and develop some more goodness.
I was honestly quite surprised when I first took a bite out of these coconut flour muffins; they were spectacular and didn’t taste one bit like coconut. If you’ve baked with coconut flour before then you know it’s pretty difficult to do because of the absorbency and flavor. GAME CHANGER! These are fluffy, moist and packed with wholesome ingredients that won’t weigh you down.
I used Almond Breeze Almondmilk Unsweetened Vanilla in this recipe, but know that any of their flavored almond milks will work. I’m also a huge fan of Almond Breeze Almondmilk Chocolate and the Almond Breeze Almondmilk Coconutmilk Original.

Double Chocolate Coconut Flour Muffins {paleo, grain free}

Ingredients
- 1/4 cup creamy almond butter
- 2 tablespoons coconut oil, melted and cooled
- 1/2 cup coconut sugar
- 1 tablespoon vanilla extract
- 2 eggs, at room temperature
- 1 cup Almond Breeze Unsweetened Vanilla Almond Milk, preferably at room temperature
- 1/2 cup coconut flour (I used Trader Joe's)
- 2 teaspoons baking powder
- 1/3 cup high-quality unsweetened cocoa powder (I use Ghirardelli)
- 1/3 cup chocolate chips (I used Enjoy Life)
Instructions
- Preheat oven to 350 degrees F. Line 12 cup muffin pan with cupcake liners and generously spray the inside of each liner with nonstick cooking spray.
- Add almond butter, coconut oil, coconut sugar and vanilla to the bowl of an electric mixer and mix on medium speed until well combined.
- Slowly add in eggs, one at a time; beat again for one minute until batter is smooth and creamy. Pour in almond milk and mix on low speed until combined.
- In a small bowl whisk together coconut flour, baking powder and cocoa powder.
- Slowly add dry ingredients to wet ingredients and mix on low speed until batter is smooth and creamy. Fold in chocolate chips with a wooden spoon.
- Use a large cookie scoop to disperse batter evenly into prepared pan. Bake for 18-20 minutes or until toothpick comes out clean with a few crumbs attached. Cool for 5 minutes then immediately transfer to a wire rack to finish cooling.

I used to be one of those people that thought I could never go vegan, but after eight years as a vegetarian I decided it was important enough for me to give it a try. Now over a year and a half later I’m loving it! Now, i was never a big fan of eggs, but I was quite the cheese connoisseur 😉 I don’t even miss it anymore because I have found a whole world of food I never knew about before. Now I will be the first one to tell you that going vegan is not for everyone, but, in general, you would be surprised what you are capable of when you try something new that you never thought possible!
Anyway, These muffins look delicious – I have TJ’s coconut flour that I have been DYING to use, but I cannot seem to find coconut flour (muffin or other) recipes that don’t involve a bunch of eggs… So if you feel like experimenting 😉 I foresee flax eggs going wrong in this recipe. Maybe I’ll get rebellious and try to make it work. Thank you for all your amazing recipes! I have loved every one that I’ve tried and so many are easily made vegetarian/vegan. you could try chia eggs? 1 tbsp chia seeds ground up and whisked with 4 tbsp water. I use them in GF bread recipes that require egg because I don’t like the eggy taste.

I’ve actually just discovered allergies to gluten AND dairy, and am now eating Paleo because I have no choice. And this recipe looks delicious, and surprisingly, Paleo… minus the baking powder. These look DELICIOUS! But I’m allergic to coconut 🙁 any substitutions for coconut flour that will keep the consistency the same? As for coconut oil and sugar, will olive oil and brown/granulated sugar work? Haha, maybe I’m better off just looking at these.

If you can’t have almond milk then yes, coconut should work.
I loved your banana bread recipe! I’m trying time find a coconut flour (that’s what I have currently) muffin recipe to make strawberry muffins with. Do you think I could add a cup of fresh strawberries to this, or would you think it would be too moist?

It is a relief to find recipes that allow me to continue “baking” and I’ve learned to adapt recipes. Sometimes I make a combo of flours in my mixes using almond, coconut, arrowroot and/or tapioca flours to make the results lighter and not so heavy/dense. I’ve pinned your recipes and am following your posts.
Really impressed with these muffins. They’re more like cupcakes than muffins. Regardless, they were awesome!! Made a few modifications. Used peanut butter due to almond allergy. Swapped 3/4c honey for coconut sugar (we’re not vegan). Swapped coconut milk for almond milk. Bumped up cocoa powder to 1/2c and added two handfuls of chocolate chips (I love chocolate). Best coconut flour chocolate cupcake I’ve tried and I’ve tried a lot. Great job Monique!
I could not believe how yummy these muffins were. I used coconut milk instead of almond milk and sunflower seed butter instead of almond butter. I used honey instead of coconut sugar because I didn’t have any. I love using coconut flour but sometimes the flavor and consistency can be not great. These were perfect. I made these tonight. They had good flavor and were moist but they were very crumbly. They would not hold together. I used peanut butter instead of almond butter. Any suggestions?
You can do Primal. It’s Paleo + dairy. Lots of people choose that option–as long as dairy doesn’t bother you, it’s no big deal.
I don’t go in much for that “all things in moderation” crap but then, I actually react badly to some foods, wheat and the other gluten-ish grains in particular. Not just GI crap but things like mood issues and migraines and weird itchings when I’m trying to fall asleep at night and so on and so forth. I also find legumes do unpleasant things to me if I eat enough of them–not just gas, actual pain. If someone can eat all that stuff and do fine, that’s cool with me. Just be aware, I used to not be able to tell that this stuff was messing with me. I wasn’t very aware of the whole food-health connection at one time. I thought I just had a messed-up body. It can take going off the extra junk for a while and then introducing it again later to understand where you’re really going wrong. I found out about the wheat-migraine connection because I went off wheat to break a weight-loss stall. Wasn’t thinking “migraine cure” at all.

Made these with my kids earlier this week and everyone loved them. Getting ready to whip up another batch so my kids can serve themselves in the morning and I can sleep in.
These muffins are awesome! My daughter and I eat them for breakfast at least five times a week. I have found if I reduce the liquid and/or add almond flour they hold together much better. I also like to add hemp seed, flax, chia seeds, walnuts and anything else that sounds good.
I just made these muffins and the texture was perfect, but my daughter thought they were they weren’t sweet enough.
How can I make them just a little sweeter?

For mine, I reduced the sugar to a little less than 1/3 of a cup and used half of a banana to replace the sweetness. They came out very dark chocolately and sort of bitter-which is exactly what I was going for because I don’t like my baked goods super sweet! You can’t even taste the almond butter or the coconut flour.
OVERALL:
Absolutely amazing! These have more of a cupcake consistency than that of a muffin, I feel like I can’t eat just one! Definitely a great treat that makes you feel so much less guilty about grabbing a second one.

I made these muffins–the flavor was superb–you can’t tell is made with coconut flour or coconut oil. I did a few revisions. Instead of using almond butter, I used 1/4 cup mashed sweet potato. For the almond milk, I used only 1/2 cup + 1/2 cup unsweetened organic applesauce, and threw in a few extra chocolate morsels–I used dark chocolate-Toll House. The only problem I had was with the texture. I had to keep baking them longer and even upped the oven temp to 400 degrees for the last few minutes, I think I baked them a total of 25 minutes or thereabouts. I let them cool for about an hour and a half. I used a silicone muffin pan–so they are easy to remove, but I got only 11 muffins instead of 12. For some reason 2 of them was so crumbly and trying to get them out they just came all apart in pieces–I ate the pieces and it was delicious! The other 8 came out in one piece but very soft and don’t know if once you bite in them if they might fall apart. I know I made revisions to the recipe and maybe that is why the texture was so soft? Does anyone have any suggestions as to what I could do to make them still tender but firmer, not to fall apart? I prefer not use almond butter or peanut butter. I seen online where brownies were made with sweet potato so that is why I tried using sweet potato. I have experimented with a few chocolate muffins and this one has the best flavor and was not grainy. Oh, I also sifted the coconut flour, maybe that made it too tender? Thanks for any help!
Hi Cathy! The substitutions likely changed the texture here. I’ve found that baking is such a science, and that each ingredient is super important for the taste + texture outcomes! I haven’t tried using other ingredients in this one, so I’m not 100% which substitutions were the culprit. Feel free to use any nut butter!
Thanks for your reply Monique. I have made these muffins almost like before again, but I did not sift; I think that is what made them crumble so easy. I did add 1 Tbs. of almond butter the last two times I made them, and used only 1/2 the vanilla in all my tries, due to the high expense of pure vanilla extract. The taste is superb. My chocolate morsels (dark chocolate) does not melt all the way in the muffin and some are still, hard. I use silicone muffin pans. My baking times has varied. 22-26 minutes in the 3 times I made them. Mine does not raise as high as yours and I still get only 11 muffins. I fill the muffin cups 2/3 full and it raises only to the top of the cup. I will try making the muffins just like your recipe and see how it turns out and let you know, I am aiming for a higher raise. Thanks so much for this recipe. My son and I just love it and so does my sister who is gluten sensitive. I plan to make these for Christmas family gathering.

Mmm these were so sweet and satisfying as a quick afternoon treat to whip up with my toddler. We used only 1/4 cup sugar and 2tbsp psyllium instead of eggs. They were a little soft and crumbly but delicious none the less. Thinking next time I’ll also use 1 mashed banana for an extra layer of sweet. Thanks!

The first time I baked this I had forgotten my almond butter was salt free. Of course that was not good. So yesterday I gave it another shot- same measurements except for 1/4tsp salt. Let me tell you- this is by far the best chocolate muffin I’ve ever had- wheat or no wheat version. By far.

Hi there, I liked this recipe and it was so easy. My only comment/question is: is the 1 tablespoon vanilla correct? That seems like a lot compared to other baking recipes. I still did it and did 1/2 vanilla and 1/2 almond extract which I would not recommend. I am tempted next time to try 1 tsp vanilla as it just looks like a typo. Any thoughts are appreciated. Thanks!

I’ve recently gone gluten free for health reasons, so I have been trying out new recipes. I have realized I need to stop comparing things to my old way of eating, so that I’m not disappointed when something doesn’t “feel” the same. These little cakes taste delicious; however, I am a texture person, and I didn’t care for the way they broke apart and almost felt gooey. They were quite fluffy, but disappointing in substance as I bit into the cake. It didn’t stop me from eating them, but I probably will use a different flour if I make them again.
Hi Tammy! Many gluten free flours will have a softer texture. Try these, which use almond + oat flour 🙂

Just made these muffins and they are really good. Cooked at gas 3 for 30 mins. Swapped the cocoa powder for protein powder and put in extra peanut butter and added 1/2 cup unsweetened dedicated coconut 😋

Hi Neha! So glad you like the recipe. I haven’t tried making this sugar free, as my homemade treats almost always have some type of sugar in them (either natural or, occasionally, regular sugar).
My grocery store has been out of wheat flour due to COVID-19, but I found a package of coconut flour in the back of my pantry. These were absolutely delicious! I had to substitute granulated sugar for the coconut sugar and 2% milk for the almond milk since that was all I had. This is a very versatile recipe, thank you!

My muffins did not turn out the picture at all. It REALLY needs some xantham gum because mine fell apart trying to get them out of the muffin pan.. They taste great but fell completely apart on me.

I think this is one of the healthiest and tastiest muffins I have ever seen. I would definitely try this.
I just made these and they came out beautifully! I used erythritol sweetener in place of coconut sugar, added a mix of chia flax and hemp seeds to the batter, and used oat milk and coconut milk in place of almond. Also topped half of them with crushed walnuts and unsweetened coconut flakes. Delicious!

Delicious and simple to prepare. I needed to use up two overripe bananas and had all the other ingredients except almond butter, so I substituted canola oil. This recipe is a keeper; it’s so moist, chocolaty, and rich.

This is a delicious simple recipe. I had most of the ingredients in my pantry. I did sub peanut butter for almond butter, granulated sugar for coconut sugar and 2% milk for almond milk. When I mixed the wet ingredients I was concerned it was too wet. But once you slowly mix in the dry ingredients it becomes a beautiful batter. I highly recommend.
